The thing we love about salsa is that there are so many different varieties you can make. Adding in fruit adds a whole new flavor and texture to the salsa that we really enjoy. This Semi-Homemade Pineapple and Black Bean Salsa is the perfect appetizer to serve at parties because of its fresh, seasonal taste and its simplicity.

Why mix black beans and pineapple?

Ingredients

  • 1-15.5 oz can black beans, drained
  • 1-14.5 oz can tomato and green chilies
  • 1-4.5 oz can chopped green chilies
  • 1 cup finely chopped pineapple
  • 1 tbsp cilantro, chopped finely
  • Juice of 1 lime
  • 1/2 red onion, chopped
  • 1-15 oz can corn

Instructions

  1. Mix all ingredients together and refrigerate for 20 minutes prior to serving.
  2. Serve with low sodium tortilla chips, or any other way you enjoy traditional salsa.
