I don’t know about you, but I love some of the most simplest recipes, like this homemade Oven-Roasted Heirloom Tomato Salsa! Fall, winter, summer, or spring…salsa is always a yes!
While salsa can be simply store bought, when homemade, it packs more freshness, more flavor, less additives, and more nutrients. I also find that tomatoes give my skin an organic glow that just effortlessly radiates. It may be the Lycopene content or some other nutritional component, but whatever it is…it works!
What I love about homemade salsa is its simplicity. You can take a handful of plant-based ingredients, some herbs and spices, roast them, and make a dish that is appealing to the very last bite. If you want to add to the nutritional value, you can throw in some kale or sub veggies for tortilla chips! No matter which way you go, the options are endless.

I personally love this heirloom salsa variation as it not only packs the roasted salsa flavor, but it mixes things up a bit by providing a variety of vibrant colors that add to the aesthetic appeal. What’s also perfect about salsa is that it can be made to salvage produce that’s spoiling, made in bulk, and used in a myriad of dishes!

Ingredients
- 1 whole white onion
- 4-5 Heirloom tomatoes
- 4-5 garlic cloves
- Spanish seasonings, to taste
- Onion salt, to taste
- Sea salt, to taste
- Olive oil
- 3-4 Chilis in adobo sauce
- Lime juice, to taste
- Cilantro, to taste
Instructions
- Place onions, tomatoes, garlic in the oven and top with a little olive oil, salt, Spanish seasonings, onion salt, and bake at 350ºF for 45-60 minutes.
- Let cool, place in a food processor with 3 or 4 adobo peppers (depending on how spicy you like it, this is medium spice), throw in a bunch of cilantro, lime juice, and blend!
Notes
Home Chef Tip: When roasting the vegetables, little burnt crispies are good; they add more flavor in my opinion. Once you see a few, move them around, bake a little more, then remove from heat.
