Loaded, Baked Vegetarian Nachos

These Loaded Vegetarian Nachos deliver cheesy goodness and protein without any meat. Made with chili beans, lots of cheese, diced tomatoes, and peppers piled high on top of a bed of tortilla chips, this quick and simple one-pan dish is a fun party appetizer or weeknight meal. If you like getting the kids involved in the kitchen, this is the recipe you’ll want to try because it’s so easy to make and kids love devouring their own kitchen creations. Top off your new favorite nachos with some low fat sour cream and some healthy homemade low sodium guacamole for the perfect dish!

Ingredients

  • Tortilla Chips
  • 1 can Tomatoes and Green Chilies
  • 1 Green Pepper, diced
  • 1 can Chili Beans
  • 1 Tomato, diced
  • Low Fat Shredded Mexican Cheese Blend

Instructions

  1. Preheat oven to 350ºF.
  2. Lay down tortilla chips on a cookie sheet.
  3. Open your tomatoes and green chilies and drain.
  4. Add them by spoonfuls on top of your tortilla chips.
  5. Open your chili beans, drain, and add them by spoonfuls onto your tortilla chips.
  6. Add your diced green peppers and chopped tomatoes.
  7. Add the shredded Mexican cheese.
  8. Bake in oven for 15 minutes or until cheese is melted.

Notes

Top with guacamole and sour cream.
