These Loaded Vegetarian Nachos deliver cheesy goodness and protein without any meat. Made with chili beans, lots of cheese, diced tomatoes, and peppers piled high on top of a bed of tortilla chips, this quick and simple one-pan dish is a fun party appetizer or weeknight meal. Loaded Vegetarian Nachos are the ultimate family weeknight meal. So simple, you can have your kids participate in the preparation!
Ingredients
- Tortilla Chips
- 1 can Tomatoes and Green Chilies
- 1 Green Pepper, diced
- 1 can Chili Beans
- 1 Tomato, diced
- Low Fat Shredded Mexican Cheese Blend
Instructions
- Preheat oven to 350ºF.
- Lay down tortilla chips on a cookie sheet.
- Open your tomatoes and green chilies and drain.
- Add them by spoonfuls on top of your tortilla chips.
- Open your chili beans, drain, and add them by spoonfuls onto your tortilla chips.
- Add your diced green peppers and chopped tomatoes.
- Add the shredded Mexican cheese.
- Bake in oven for 15 minutes or until cheese is melted.
Notes
Top with guacamole and sour cream.
