Tuna Salad Cucumber Veggie Boats with Carrot Noodles

These flavorful Tuna Salad Cucumber Veggie Boats are a fun way to get plenty of fresh vegetables into your day. The protein-packed tuna is mixed with carrot and yellow squash noodles, and this salad gets a nice crunch from diced celery, frozen peas, and red onion. Ingredients
- 6 cucumbers
- 1 large carrot, Spiralized
- 1 yellow squash, Spiralized
- 1/2 cup chopped red onion
- 1/2 cup frozen peas
- 1/2 chopped green pepper
- 1 cup chopped broccoli
- 3 celery stalks, chopped
- 1 handful parsley, chopped
- 1/2 cup Greek yogurt
- Juice of 1 lemon
- Crushed black pepper
- 2 cans light tuna packed in spring water
Instructions
- Spiralize your carrots and yellow squash.
- Chop the rest of the ingredients and add into a large bowl, then add tuna.
- Add 1/2 cup Of Greek yogurt.
- Add lemon juice.
- Mix all together and let sit while you hollow out your cucumbers.
- Cut each cucumber in half length wise and hollow out the seeds with a small spoon.
- Fill each cucumber with the tuna mixture and enjoy.
