A summer salad with fresh farmers market ingredients!
Every time I walk into the farmers market, it’s filled with different varieties of oranges so I like to pick up a variety and sample a few. Lately, I am in love with the cara cara oranges. They are pinkish orange in color on the inside and super sweet. Pair these oranges with the creamy deliciousness of avocados, and you’re sure to love the flavor combination.
For this salad, I used baby lettuce, arugula, and spinach as the base, but you can use your greens of choice.
Homemade Turmeric Dressing
Let’s talk about the dressing that is the heart of this salad. This Turmeric Mustard Dressing is to die for. It’s bright with a warm-earthy taste, a hint of ginger, and a kick of chili flakes. It has balanced flavors with the right amount of natural sweetness from the honey. For ages people have known about the health benefits of turmeric so I like to include it in my recipes whenever possible.

This salad is a great side dish for dinner that complements many entrées. It’s on the lighter side so it pairs perfectly with pasta and rice dishes. It’s also the perfect lunch to take to the office!
Ingredients
- 3 cups mixed greens
- 1 orange, sliced
- 1 avocado, sliced
- 2 tbsp goat cheese, crumbled
- 1 tbsp sunflower seeds
- 4 tbsp extra virgin olive oil
- 2 tbsp lemon juice or rice vinegar
- 2 tsp mustard
- 1 tbsp honey
- 1/2 tsp turmeric
- Salt, to taste
- Pinch of Pepper
- Pinch of chili flakes (optional)
Instructions
- Wash your greens well and spin in a salad spinner if you have one.
- In a big bowl, add in all the ingredients for the salad.
- In a small bowl, whisk all of the dressing ingredients until blended completely.
- Add the dressing to the salad and serve immediately.
Notes
Home Chef tip: You may add some protein like chickpeas or lentils, and grains like quinoa, couscous, or wild rice to make it a complete meal. You may substitute honey with agave, if you prefer. Leftover dressing can be used in soups, stews, or marinades.
