This Vegan Superfood Spiralized Salad is made with ingredients that are readily available and can be easily added to your meal prep routine. There are no fancy ingredients in this salad, but it’s sure to wow you with its exotic flavors. I have used superfoods like quinoa and chia. Cucumbers, mangoes, and basil add fresh, seasonal flavors. Once you top it off with cranberries and pistachios, the salad looks so appealing. The vegan dressing is made with maple syrup, tamari, and vinegar which adds a burst of flavors to the naturally gluten-free curly cucumber noodles. A perfect meal in a bowl loaded with vegetables, fruits, proteins, and grains.

I like to meal prep a big batch of quinoa for the week and store it. After that, all you need is just 10 minutes of your time to make this gluten-free Vegan Superfood Spiralized Salad. If you don’t meal prep, don’t worry; you can cook the quinoa just before you prep the other ingredients. Just toss them all together in a bowl and you are done, as simple as that. GF Vegan Superfood Spiralized Salad

Ingredients

    For the salad:
  • 1/2 cup cooked quinoa
  • 1 large cucumber, spiralized
  • 1 large mango, cubed
  • 2 tsp chia seeds
  • 6 basil leaves, chopped
  • 1 tbsp pistachios
  • 1 tbsp cranberries
  • For the dressing:
  • 1 tbsp maple syrup
  • 1 tbsp tamari
  • 1 tbsp vinegar

Instructions

  1. In a salad bowl, toss together the quinoa, cucumber noodles, and mango chunks.
  2. Sprinkle with chia seeds, chopped basil, pistachios, and cranberries.
  3. Prepare the dressing by mixing the maple syrup, tamari, and vinegar together in a small bowl.
  4. Drizzle over the salad and serve immediately.

Notes

Home Chef Tip: Substitute soy sauce in the dressing if you don't have tamari on hand.
