If you head outside, you’ll notice that there’s a change in the air. The weather is getting warmer. There are birds chirping. Dozens of squirrels can be seen running all over. Flowers are blooming and budding. It means that we are closer and closer to those really warm summer days. We absolutely love when the weather gets warmer because it means pool days and cool treats.

For some people, warmer days may be exciting for amusement parks and pool days. For others, you may be excited about burgers on the grill and delicious pasta salads. But for most people, whether you have kids or not, warmer days mean that you are going to need cool treats. Whether you like popsicles, ice cream, or milkshakes, once those temps start creeping up and up, you are going to want one or all on a daily basis.

One of our favorite family bonding things to do is make homemade treats and these Coconut Watermelon Popsicles are no exception. They are so easy to make that they only need 2 ingredients. Literally, the only things that you need to make this warm weather cool down treat is watermelon and coconut water. It doesn’t get any easier than that! There are so many ways to make these homemade popsicles that you can’t go wrong no matter which way you choose.

If you have kids, these are one of the easiest and most delicious ways that you could ever make a recipe together.

How to make Coconut Watermelon Popsicles:

There are literally endless ways to make these coconut watermelon popsicles. A few of the ways that you can make them that are shown in the photos are:

  • Add watermelon chunks to a popsicle mold and then fill the remaining with coconut water.
  • Purée watermelon and mix in the coconut water and fill up the popsicle mold.
  • Fill half the mold with coconut water, freeze, then fill the remaining mold with watermelon purée.
  • Do a tri-level popsicle by layering the watermelon purée and coconut water, freezing between each layer. You can do coconut water, watermelon purée, coconut water. Or you can do watermelon purée, coconut water, watermelon purée.
  • Or you can do a combination of anything above.

Coconut Watermelon Popsicles

Ingredients

  • 2 cups coconut water
  • 3 cups watermelon cubes or purée

Instructions

  1. In your popsicle molds, add watermelon chunks and then fill the remaining mold with coconut water.
  2. Alternatively, you can purée some of the watermelon and alternative pouring in watermelon purée and coconut water.
  3. Add popsicle sticks.
  4. Let freeze completely until hardened.
  5. Keep in freezer or eat immediately.

Notes

Home Chef Tip: Don't like watermelon? Substitute your favorite melon instead, or you can use fresh berries!
