Satisfy your hunger the healthy way when you enjoy this super simple Mediterranean Wheat Berry Salad full of seasonal vegetables, feta, and a light vinaigrette. This is an amazing summer salad that you just need to try!

Mediterranean Wheat Berry Salad Recipe

I don’t know about you, but I absolutely love salads in the summertime. They’re no-cook, refreshing, and the perfect way to use up garden or farmers market produce. My salads pretty much consist of whatever I have in the refrigerator (I like to call them everything-but-the-kitchen-sink salads) with a simple vinaigrette dressing. That means I don’t really have to go on a special shopping trip to eat healthy. Score!

The best way to relax this weekend is with a healthy Mediterranean Wheat Berry Salad recipe full of seasonal vegetables and a drizzle of Dijon vinaigrette.

This particular Mediterranean Wheat Berry Salad recipe has some of my absolute favorite ingredients: Kalamata olives, cucumbers, feta, and pine nuts. With those delicious ingredients, I don’t even realize I’m eating kale. Greens like kale are very alkalizing for your body and are packed with rich vitamins, minerals, and antioxidants. It’s a delicious super food that is perfect for this salad.

I’m also a huge fan of tossing a bunch of grains into my salad because then it seems more like a hearty meal than a side. Some of my favorites are wheat berries, kamut, farro, and bulgur. These Mediterranean flavors also work super well with a piece of grilled salmon or chicken to make it even more filling.

Mediterranean Wheat Berry Salad

Prep Time: 15 minutes

Cook Time: 1 hour

Serving Size: Serves 8

Mediterranean Wheat Berry Salad

Ingredients

  • 1 cup wheat berries
  • 3 tbsp white wine vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • ½ cup olive oil
  • ½ tsp each coarse salt and ground black pepper
  • ½ tsp dried oregano flakes
  • 2 cups kale, chopped
  • 1 medium seedless cucumber, diced
  • ½ cup crumbled feta
  • ½ cup pitted Kalamata olives
  • ¼ cup pine nuts

Instructions

  1. Cook wheat berries according to package directions. Drain and cool.
  2. In a large bowl, whisk together vinegar, Dijon, honey, olive oil, salt, pepper, and oregano.
  3. Stir in kale, cucumber, and half of the feta, olives, and pine nuts.
  4. Transfer the salad to a serving bowl and garnish with remaining feta, olives, and pine nuts.

Notes

Home Chef Tip: Prepare salad ingredients except dressing ahead of time as part of your weekly meal prep. Toss with vinaigrette right before eating.
