Make dinner a fiesta with this simple and delicious Heart-Healthy Crock Pot Chicken Taco Soup recipe. Simply toss all of your ingredients in your slow cooker in the morning and come home to a spicy and hearty flavor sensation for dinner.

Heart Healthy {low sodium} Crock Pot Chicken Taco Soup

We love turing to the slow cooker on busy weeknights to ensure that we have a hot and delicious meal on the dinner table without a lot of fuss or messy cleanup. When those slow cooker meals are low in sodium, packed with delicious Mexican flavors, and loaded with protein and vegetables like this simple recipe for Heart-Healthy Crock Pot Chicken Taco Soup, we can hardly wait until dinnertime. This hearty soup is a “set it and forget it” kind of meal which is why we turn to this recipe often. Simply toss all of the ingredients in the Crock Pot in the morning, turn it on, and go about your busy day knowing dinner will be waiting for you when you get home.

Ingredients
  • 1 lb frozen chicken tenderloins
  • 2 cups low sodium vegetable broth
  • 1-6 oz can tomato paste
  • 1-4 oz can diced chilis
  • 1 can no salt added corn, drained
  • 1 can no salt added black beans
  • 1 can no salt added diced tomatoes
  • 1 pkg Mrs. Dash Taco Seasoning Mix
  • Shredded Monterrey Jack Cheese, optional for serving
  • Corn Tortilla Chips, optional for serving
Instructions
  1. Place the tomato paste in the bottom of your Crock Pot and mix in the vegetable broth.
  2. Add the taco seasoning mixture, stir.
  3. Place frozen tenderloins in sauce.
  4. Add canned vegetables.
  5. Cover and simmer on low for 8 hours.
  6. Just before serving, remove the chicken and shred, then place back in the Crock Pot and stir.
  7. Serve with shredded cheese and corn tortilla chips (optional).

    Do you happen to know the nutritional information per serving?

      As far as the sodium is concerned, it is very minimal. There is no added salt to the recipe so the only sodium is in the chicken itself and the sodium that is naturally in the vegetables. If you add the cheese and tortilla chips, that obviously ups the count, but it is still fairly insignificant.

    Are the cans of vegetables supposed to be drained? Also I cannot find Mrs. Dash Taco Seasoning Mix, what can I use in it's place?

      Hi Nancy! As per the instructions, only the corn is to be drained; you'll use the juices from the beans, tomatoes, and chilis. As for the Mrs. Dash Taco Seasoning...you have some options. You can order online (https://www.amazon.com/Mrs-Dash-Seasoning-Mix-Salt-Free/dp/B00H6XRY76/ref=sr_1_2_a_it?ie=UTF8&qid=1492101953&sr=8-2&keywords=mrs+dash+taco+seasoning), ask your local grocer to start stocking it (like I did), or if that's too much trouble, you can use 2 tablespoons of cumin powder and 1 tablespoon of chili powder instead.
