This all star Heart Healthy Loaded Jambalaya recipe is packed with shrimp, chicken, sausage, vegetables, and rice. This slow cooker dish delivers a remarkable flavor sensation that’s a sure fire crowd pleaser.

Heart Healthy Crock Pot Loaded Jambalaya

If you’re looking for a low sodium meal that’s packed with protein and vegetables, tastes amazing, and simple to make, you don’t need to look any further. This Heart Healthy Loaded Jambalaya combines shrimp, chicken, sausage, vegetables, and rice in a low sodium tomato base for a real crowd-pleasing dish. The best part is, this recipe is so simple to make and there’s very little clean up. Simply toss all of your ingredients in your slow cooker in the morning and come home to a delicious and savory meal the whole family will love!

Ingredients
  • 1 lb chicken, cubed
  • 1 lb turkey sausage, 1" slices
  • 1 lb frozen salad shrimp
  • 2 cups white rice
  • 1 cup water
  • 1-6 oz can tomato paste
  • 1 small onion, chopped
  • 2 ribs celery, chopped
  • 1 red bell pepper, chopped
  • 1 medium tomato, diced
  • 1 bay leaf
  • 1 tsp cayenne pepper
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp ground black pepper
  • 1 tsp low sodium Worcestershire sauce
Instructions
  1. Pour the water and tomato paste in your slow cooker, stir to blend.
  2. Stir in all of the spices, the bay leaf, and the Worcestershire sauce.
  3. Chop all of your vegetables and put them in the pot.
  4. Cut your chicken and sausage in to bite-sized pieces and put them in with the tomato sauce blend.
  5. Add the shrimp.
  6. Stir in the rice.
  7. Simmer on high for 4 hours or low for 8 hours.

      Definitely, if that's your preference. The rice takes on the flavor of the broth during the simmering process so it's not a big deal either way.

    I made this for dinner tonight, and we thought it was pretty tasty. It did dry out considerably, and even burned a bit after a little over three hours. I added some broth( maybe a cup or so?) and that seemed to solve the dryness problem. Also, for personal preference, I only added half the amount of chili powder and Cayenne. It was still plenty zippy!

    I made this Loaded Jambalaya in the Crock Pot yesterday. I found the 2 cups of rice was way to much and I made it just like the recipe. I would next time use 1 cup of rice and 2 cups of water. The seasoning were just right for our taste buds.

      The rice can definitely be adjusted to suit your tastes, as well as the amount of liquid you use. We like a thick soup/stew, but others may not as you have indicated. That's the beauty of a recipe like this; you make it once and if you love the flavor (as you say you did), you can just adjust other ingredients to your liking.
