This easy dinner requires some multi-tasking. Though the rice and salmon are mostly hands-off, I simultaneously cooked my rice, salmon, and broccoli. The eggs are best saved for the last minute. Here is a list of the five simple ingredients you’ll need to make this 30-minute meal.

  • Baked or grilled salmon filets
  • Over-easy eggs
  • Soy sauce

Here’s how to get your easy dinner on the table!

Salmon

Either oven-bake or grill the salmon. If baking, preheat the oven to 425ºF.

If your salmon filets are frozen, thaw them before cooking. Since we’re all about keeping things simple and fast, I recommend the quick-thaw approach. Simply place your filets in a plastic bag, fill a bowl with cool water, and submerge the bag. Let them thaw completely. The smaller the filets, the faster they thaw. As the water will get colder as the frozen fish sit in the bowl, I suggest replacing the water every five minutes or so. My three filets took 15 minutes to completely thaw.

When baking, add a few tablespoons of water to a well-greased baking pan. Place filets in it and season, if desired, with salt and pepper. Cook in the oven until flaky (about 10-15 minutes).

When grilling, heat a grill pan over medium-high heat. When hot, oil the pan until coated and place seasoned filets inside. Cook for about four minutes on each side until flaky.

Rice

You can use instant rice, but I prefer cooking short-grain rice in an instant pot. Whatever your preferred method of preparation, try to keep it to under 30 minutes of prep and cooking time. My instant pot method only takes 12 minutes (from plugging it in to being fully vented) to cook five cups of rice.

Broccoli

You can always stick one pound of broccoli in a medium bowl with a 1/4 cup of water, cover it with plastic wrap, and cook it in the microwave (unattended) for 5 minutes. My favorite way to cook broccoli is pan-roasting it on the stovetop. You just can’t beat the texture doing it this way. Simply oil a large pan and place 1.5 pounds of broccoli in it on medium-high heat. Let it sit for a couple minutes (don’t stir!) so it can brown a bit. Reduce heat to medium and add a few tablespoons of water and salt and pepper (if desired). Stir and cover with a lid. Cook for a couple of minutes before uncovering. Cook until broccoli is desired tenderness. I cook mine for about 8-12 minutes.

Over-Easy Eggs

Wait until the rice, salmon, and broccoli are cooked or nearly cooked before starting on the eggs. They are best warm. Over-easy simply means the whites of the egg are cooked but the yolk will still run. This runny yolk will act as a delicious sauce for the rest of the dish. They really should just bottle the stuff, because it’s the perfect condiment! To avoid the egg sticking to the pan when flipping, be sure to generously grease the pan before cracking the eggs into it. When the underside is set, flip gently and cook the other side.

The Bowl

You really can’t go wrong when assembling your Salmon Broccoli Bowl. My preferred method is cramming in as much of each ingredient as possible and crowning it all with an egg. The golden, runny yolk oozes over the whole bowl. Have fun experimenting with ingredient amounts and play with layering your Salmon Broccoli Bowl to find your perfect dish! Notes

Home Chef Tip: Rice can dry out very quickly, so be sure to cover any unused rice with a lid or plastic wrap. Doing so will keep all the moisture in so when you go back for seconds or want leftovers, you'll have soft rice. When reheating rice, cover it with plastic wrap to keep it moist and soft.
