I absolutely love making quick and easy meals for dinner. In our house, we’re always on the go, so if it takes a lot of time or has a lot of ingredients, it just isn’t happening. Garlic shrimp with pasta was one of my favorite meals growing up. Now I can have it again with this 5-Ingredient Garlic Shrimp Zucchini Noodles recipe! It’s just 5-ingredients (not counting salt and pepper), but it packs a ton of flavor and is on the table in under 15 minutes.

Have you hopped on the zoodles train yet?

Zoodles are just zucchini cut in the shape of noodles. Zucchini + noodles = zoodles. Zoodles are a great way to have your veggies and eat your pasta too. Don’t be fooled, they don’t taste exactly like pasta, but they look like pasta and twirl like pasta and are a great way to eat classic pasta dishes in a slightly healthier way. Plus, they’re naturally gluten free! As someone with celiac disease, I’ve found zoodles to be a great way to eat all of my old favorites, just lightened up. If you love zoodles just as much as I do, also try Whole30 zoodles with turkey meatballs and cucumber noodles with mango and shrimp. Both recipes are fantastic!

What’s in the recipe?

All you need for this recipe is zucchini, shrimp, garlic, butter, red pepper flakes, salt, and pepper. That’s it! I like using butter in this recipe because it adds a great flavor to both the shrimp and the zucchini noodles. However, if you’re dairy-free, feel free to either use a dairy-free butter or olive oil. Both work great here! The red pepper flakes add a little punch of spice that takes this dish to the next level. I just love how quickly I can throw together an easy gluten-free dinner that the whole family will love! I used a hand spiralizer for this recipe, but you can also use a julienne peeler or a regular vegetable peeler. Everyone can join in on this vegetable goodness!

Garlic Shrimp Zoodles

Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes

Yield: 2 servings

Garlic Shrimp Zoodles

Ingredients

  • 2 medium zucchini
  • 2 tbsp butter, divided
  • 3 cloves garlic, minced
  • 1/2 lb jumbo shrimp (about 8 shrimp), peeled and deveined
  • 1/8 tsp red pepper flakes
  • 1/4 tsp salt
  • 1/8 tsp ground black pepper

Instructions

  1. Wash the zucchini and cut off the ends of each zucchini. Use a spiralizer or vegetable peeler to make noodles out of the zucchini. Set aside.
  2. Add one tablespoon of butter to a large skillet heated over medium-high heat. Once the butter has melted, add in the garlic and cook for 1 to 2 minutes, stirring often to ensure the garlic does not burn.
  3. Season shrimp with salt and pepper. Add shrimp to the skillet and cook for 2 to 3 minutes on each side, until shrimp turns pink. Remove from pan and set aside.
  4. Add remaining one tablespoon of butter to the pan and melt. Scrape up any brown bits from the pan with a wooden spoon.
  5. Add in the zucchini noodles and cook for 1 to 2 minutes, stirring often, until zucchini is slightly softened, but still has a nice bite. Add the shrimp back to the pan and toss to combine and sprinkle with red pepper flakes.

Notes

Home Chef Tip: Use whatever vegetables you have on hand in this recipe! Yellow squash and sweet potatoes work well too!
