I’ve always thought that the main difference between a soup and a stew was the amount of liquid that each contained. Recently though, when I was using Google to see what to name this glorious mess of savory coriander spiced salmon, the great wide interwebs notified me that there was more to that equation. Since there is barely any liquid in this Coriander Pumpkin Salmon Mess recipe, I was going to call it a coriander pumpkin salmon stew. Then I learned that stews are not just categorized by the low liquid content – but also by the fact that the meats/fish/etc were cooked over a low flame for a lengthy period of time.
Coriander Pumpkin Salmon Mess
Well, this dish was pulled together in less than 20 minutes, so that disqualified it from being a stew. As it didn’t have enough liquid to be a soup or even a curry for that matter, I figured why not tweak what my daughter referred to it as: one gloriously delicious mess! Y’all, that’s how this glorious Coriander Pumpkin Salmon Mess was born!
I cubed a little over a half pound of salmon for quick and easy cooking as well as full-on marinating, but if you would like to just brush the salmon with the coriander pumpkin sauce mix and then pan cook it or grill it, feel free to do so. Using the cubed salmon, I was able to cook this glorious Coriander Pumpkin Salmon Mess up in less than 20 minutes (from prep to serving) – stirring every so often to make sure all the salmon cubes cooked evenly.
We enjoyed our glorious one-pan meal with some heated-up garlic naan to sop up every drop of that coriander pumpkin sauce!
Ingredients
- 1/4 cup pumpkin purée
- 1/2 cup water
- 1 1/2 tsp coriander
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 to 3/4 lb salmon
- Olive oil
Instructions
- Add the pumpkin, water, cumin, coriander, paprika, salt, and pepper to a bowl. Mix well.
- Skin the salmon and cut into cubes. Add to the bowl with the coriander pumpkin sauce.
- Add 2-3 tbsp oil to a pan over a medium flame and pour the coriander pumpkin salmon mixture into it.
- Let cook for 10-12 minutes, stirring often until salmon is cooked.
- Garnish with parsley and chili flakes if desired.
- Serve with rice or naan.
Notes
Home Chef Tip: You could simply glaze the salmon fillets with the sauce and grill or cook instead of cubing it if you'd prefer.
