Hey, who said gluten-free had to be boring? This veggie pizza is the last thing you could ever call boring and even the kids will love it. You can add seasonal veggies, family favorite veggies, or the veggies in the recipe below. Whatever you do, try something new. Head down to the farmers market and grab something fresh and delicious. If you don’t have access to a grill, no fears. You can toss these babies into the oven and they come out just as tasty. These grilled pizzas are a great way to feed a crowd in a customizable way. Everyone is happy which means you’re happy!
All the Colors of the Rainbow
When it comes to veggies, the limit does not exist (quote that!). We have access to veggies in gas stations so there really is no reason you can’t get your hands on some fresh, colorful veggies for this grilled pizza. From squash to corn to sweet potato to greens, you can make your gluten-free veggie pizza every color of the rainbow.
Even if you are looking into your fridge and see a bag of carrots, wilted spinach, and a half-eaten apple…throw them on there! Shred the carrots, cube the apple, and rip up the spinach! Now you have yourself a quick and healthy dinner. Let the kids get in on this one. It’s in their nature to create, touch, and help. Let them pick their favorite veggie (or suggest one if they don’t have one) and allow them to do what is appropriate for their age.
What you’ll need to make this grilled pizza:
- Gluten-free pizza crust (I used Simple Mills)
- Sea salt
- Zucchini
- Yellow squash
- Sweet potato
- Beet
- Garlic
- Cucumber
- Organic raw cheese
- Sauce of your choice: olive oil, tomato sauce, pesto
- Grill (or oven if you don’t have one)

Ingredients
- Gluten free pizza crust (I used Simple Mills)
- 1 zucchini
- 1 yellow squash
- 1 cucumber
- 2 beets
- 1 medium sweet potato
- Organic raw cheese
- Sauce of choice: pesto, olive oil, pizza sauce
- Sea salt
Instructions
- Cook the pizza crust according to directions (on the grill or in the oven).
- Slice all veggies and lay them on the grill for 10 minutes (400°F).
- Add sauce, veggies, and cheese to the pre-cooked crust.
- Put back on the grill (or oven) for 5 minutes.
Notes
Home Chef Tip: You can use any fruits or veggies you happen to have on hand. To add a little protein, you can also top with cooked chicken breast.
