It’s like your favorite coffeehouse drink married a spice-infused vodka cocktail to create this late afternoon treat. This Spiced Cold Brew Cocktail combines coffee, vodka, coconut creamer ice cubes, and cinnamon for a happy hour drink that’s a real pick me up!
We’ve all been there. The afternoon sun is shining strong, you know it’s time to start unwinding from the day, but you are still ready to tackle some fun time with friends. You waver between your favorite cocktail and that icy cold brew you just can’t resist. This Spiced Cold Brew Cocktail is the best of both worlds because you can enjoy both at the same time! It has a shot of cinnamon, black peppercorn, and vanilla-infused vodka that will perk you right up.
How to make spice-infused vodka:
Infused Alcohols are a great way to add flavor to drinks without any extra additives or calories. Unlike flavored booze you buy at the store, making your own gives you total control over the strength and quality of the ingredients. Just keep in mind that some infusions can take awhile to steep so plan ahead. I used pretty strong spices for this drink so the vodka didn’t need to sit too long. The key is to taste the infusion often and remove your solids once the concoction reaches your desired taste.
Use coconut creamer ice cubes!
In addition to mixing super flavorful vodka into this Spiced Cold Brew Cocktail, I used this great Kitchen Hack to add frozen coconut creamer to it as well. This trick works well with any non-alcoholic addition you want in your coffee like milk, flavored simple syrups, or the coffee itself if you like it dark. This is the best way to avoid watering down your perfect cold brew cocktail!

Notes
Home Chef Tip: To make spiced vodka, add 1 cinnamon stick, 2 vanilla bean pods, and 6 black peppercorns to 4 cups quality vodka. Let sit in a cool, dark place for 2-3 days. Taste infusion daily until desired flavor is achieved. Remove solids and discard. Keep vodka in a lidded jar in the refrigerator for up to one month.
