One-pan meals are the best. Minimal clean up needed and very low fuss; exactly what a weeknight dinner should be all about. This One-Pan Chicken and Rice Skillet Meal is just that – a super easy five ingredient recipe.
I love to prep ingredients as I go. This always cuts down on total time spent in the kitchen so I love to create meals where this is possible.
For this recipe, while the chicken is cooking, I cut up the red peppers, then once I add those in, I start dicing up the tomatoes. I have a nice rhythm going where once one ingredient is ready to go into the pan, I can start prepping the next one. It really speeds up the process in a dish like this 5-ingredient chicken skillet.
If you have 30 minutes, you have time to make dinner!
This way virtually all the prep work is happening simultaneously with the cooking of the dish. Therefore, this one pan chicken and rice dish only takes 30 minutes to put together and the last 15 minutes are completely idle time.
A versatile 30-minute skillet meal for busy weeknights!
I have made about a dozen different versions of this recipe over the years, from using hot Italian pork sausages, to adding in chickpeas, white beans, greens, shrimp, and avocado. There is just no shortage of combinations for delicious one pot rice and protein skillet recipes.
This particular skillet meal is the easiest one to make though – only five key ingredients with each one playing a huge role in adding in maximum flavor. The sautéed and lightly caramelized peppers and tomatoes add a rich and fragrant taste to the rice, and cooking everything together in chicken broth instead of water adds additional richness to this dish.

Ingredients
- 1 tbsp olive oil (optional)
- 1 lb chicken sausage
- 2 cup diced red peppers
- 2 cup diced tomatoes
- 1.5 cup basmati rice
- 3 cup chicken broth
- salt/pepper to taste
Instructions
- Heat oil over medium heat in a large pan or skillet. Add chicken sausage with casings removed.
- Cook chicken until browned, breaking up the pieces.
- Add red peppers and cook for a few minutes.
- Add tomatoes and cook for a few minutes.
- Add rice, salt and pepper. Cook for 1-2 minutes, mixing everything.
- Add broth.
- Bring to a boil, reduce heat and simmer, covered for 15-20 minutes or until rice is cooked through.
Notes
Home Chef Tip: If you don't have fresh tomatoes, use a jar of diced tomatoes instead!
