We love enjoying the “free” time…no schedules, spending time at the pool, doing some traveling, and mainly just chilling out. One thing we also love to do is enjoy sweet treats! I love using in-season fruit in desserts, especially for summer and it’s currently strawberry season.
One thing that’s great about this recipe is that you can use just about any fruit you would like. So if it’s blueberry season…go for it, replace the strawberries with blueberries. What’s even better is that you don’t have to slave over a crust for these bites, you just pick up pre-made pastry shells because no one wants to be slaving in the kitchen during the summertime.
Homemade Lemon and Strawberry Curd Bites
So what do you need for this recipe? For the Filling: One can of sweetened condensed milk, 1/4 teaspoon vanilla extract, 1/4 cup sugar, 1/3 cup strained fresh lemon juice, one large egg yolk (save the white for meringue), a pinch of salt, and fresh strawberries (save a few for garnishing). For the Meringue: One egg white, 1/4 cup sugar, and 1/4 teaspoon vanilla extract.
For the filling, you literally just mix all of the ingredients together. You really can’t get more simple than that! Once the ingredients are well mixed, you pour the filling into the pastry shells. Then you’re ready to make the meringue. Growing up, I used to think ‘what’s the point’ in having meringue on a pie or dessert because it was always seemingly bland. Now every time I prepare a recipe with meringue, I always include sugar and vanilla for a sweet, yummy taste.
Once the meringue is done, dollop a bit atop each filled pastry and bake at 425ºF for 20 minutes or until the centers are set. To get the tops of the meringue slightly brown, turn the oven to broil for a minute or two until the tips of the meringue are perfectly brown.

Ingredients
- 1 can sweetened condensed milk
- 1/4 teaspoon vanilla extract
- 1/4 cup sugar
- 1/3 cup strained fresh lemon juice ( about 3 lemons)
- 1 large egg yolk (save the white for meringue)
- Pinch of salt
- Fresh strawberries (save a few for garnishing)
- 1 egg white
- 1/4 cup sugar
- 1/4 teaspoon vanilla extract
Instructions
- Preheat oven to 425ºF.
- Place pre-made pastry shells on a non-stick pan.
- Mix all the ingredients together for the filling and use it to fill each pastry shell, set aside.
- Start the meringue. With a hand mixer on medium speed, whip the egg white, sugar, and vanilla until soft peaks form.
- Dollop a bit of meringue atop each filled pastry.
- Bake the bites for 20 minutes or until the centers are set.
