Post-holiday life can be pretty rough, don’t you think? The parties and sparkly decorations are gone and replaced with a lot fewer reasons to have twinkly lights in your house and a lot less fudge in your life. This saddens me. Plus, if you are like me, you are definitely left with a major sugar hangover that is hard to kick. That is why I am trying to transition from holiday indulgence to new year’s health by having better-for-you treats around the house to make it easier. Today I am sharing one of my favorite healthier treats: Dark Chocolate Trail Mix Bark!
Dark Chocolate Trail Mix Bark Recipe
There is so much to love about this bark. First, it is so simple to make and requires just a few ingredients. Next, it only takes a little piece to stave off sugar cravings while feeling like you’ve had the most indulgent treat. The rich, dark chocolate pairs so well with the crunch of coconut, almonds, seeds, and other nuts, and I love the added sweetness of the dried cranberries. Plus, sprinkling a little sea salt will make your taste buds so happy they’ll forget that fudge season ever happened. Here’s how you make it:
Ingredients
- 1 lb dark chocolate, chopped (I like using one with around 60-70% cacao)
- 1 cup trail mix
- 1/4 cup dried & toasted coconut chips
- 1/2 tsp sea salt
Instructions
- Line a baking sheet with parchment paper. In a microwave-safe bowl, melt chocolate in the microwave in 30-second increments, stirring after each, until completely melted.
- Pour melted chocolate on parchment paper and spread, creating a 1/4-1/2 inch layer of chocolate.
- Sprinkle melted chocolate with trail mix, coconut, and salt. Refrigerate bark for about 10 mins until completely set.
- Once set, cut bark into pieces using a sharp knife, and eat or store. Bark can be kept in an airtight container for 10 days.

Home Chef Tip: This recipe is so fun to make because it is so versatile. I like making my own trail mixes and changing up the ingredients. I love including any variety of almonds, walnuts, pistachios, roasted pumpkin seeds, chia seeds, dried cherries, or dried cranberries to add different textures and flavors!

Don’t you think this bark is pretty? I love the colors of the seeds, nuts, and coconut against the dark chocolate. This is a perfect treat to put in a lunch box or take to a party. It is so versatile and delicious with a little less guilt (and a lot less mixing bowls and mess) than a cupcake. My kids are so happy when I give them a little piece, and it’s so delicious they don’t even notice that there is some healthy stuff packed in there. Plus, it is so fun to change up the flavors with different add-ins, making it more or less indulgent depending on the occasion.
