Summer is right around the corner, which means our days of exploring the outdoors have returned. Besides hiking, biking, and visiting the beach, I plan on enjoying every no-bake recipe I can get my hands on. Let’s be honest, who wants to bake in the middle of summer?
In order to fuel my family with healthy, yet satisfying snacks, I’ve come up with these No-Bake White Chocolate Trail Mix Bites to enjoy after a day of playing at the park. These little balls of goodness are the perfect combination of sweet and salty. Especially great for those midday cravings!
No-Bake White Chocolate Trail Mix Bites
Creating a kid-friendly charcuterie board, with this no-bake treat, is by far our favorite way to snack. There is something about putting a variety of food in one spot that my kids love! As long as they’re making smart food choices, I’m happy. So, when it’s snack time, I try to offer a healthy balance of fruit, veggies, proteins, and grains. I like to include a few of their favorite snacks, but I also use this opportunity to introduce new ones.
Which brings me back to our latest addiction, No-Bake White Chocolate Trail Mix Bites. The inspiration comes from my kids, who conveniently like to eat all of the candy out of our homemade trail mix. So in order to prevent the chocolate thieves from striking once again, I’ve combined all of the elements of trail mix into a cute tiny ball. These bite-sized snacks are great for pairing with kid-friendly charcuterie boards, or tossing into a bag for an on-the-go treat.

- 1/4 cup cashews
- 1/4 cup peanuts
- 1 tbsp honey
- 1/2 pretzels, chopped
Instructions
- In a small food processor, lightly chop the almonds, cashews, and peanuts until broken into small pieces.
- In a medium bowl, combine all dry ingredients and mix well.
- Add the peanut butter and honey to dry ingredients and mix until well combined.
- Roll into about 1-inch balls and place on a baking sheet lined with parchment paper.
- Store in refrigerator until ready to serve.
Notes
Home Chef Tip: Rolling the balls with damp hands helps keep the mixture intact. Or line a backing dish with parchment paper to make trail mix bars!

The best part about this recipe is that it requires hardly any effort at all. In fact, my son is the one teaching me these days. Getting our children involved in the kitchen is something that we’ve done their entire lives. It’s fun, educating, and allows them to feel a sense of accomplishment. Plus, it allows me to kick back with a glass of wine!
Whether your plan is to relax at home this summer, or spend it adventuring outdoors; this combination of snacks is a great way to refuel your little ones!
