There’s just something about Ferrero Rocher® Truffles that always makes me think of the holidays. Going all the way back to childhood, I used to specifically love those gold covered truffles right around Christmas time.
Nutty hazelnuts covered in chocolate with a smooth cream inside — it’s just the perfect holiday treat.
But who needs all those artificial ingredients and sweeteners when you can make your own Copycat Ferrero Rocher® dessert at home.
Because we’re all grown up now, instead of the usual candy form, I decided my copycat dessert would be better in chia pudding form and served in a martini glass.
Copycat Ferrero Rocher® Chia Pudding Recipe
This chia pudding requires minimal prep and clean up time. You only need a handful of ingredients – toasted hazelnuts, cacao powder, maple syrup, coconut cream, chia seeds, and Grand Marnier® (for that extra grownup touch).
Everything is blended together in a food processor until the smooth, rich, and creamy chia pudding is ready. Then you just pour it in the martini glasses and let it set in the fridge for a few hours. Serve sprinkled with crushed nuts and chocolate shavings. This is a healthier, deconstructed form of the classic.

Ingredients
- 1 cup toasted hazelnuts
- 3 tablespoons cocoa powder
- 1/4 cup maple syrup
- 2 tablespoons chia seeds
- 3/4 cup coconut milk
- 1 tablespoon Grand Marnier®
- For serving: 4 hazelnuts, crushed and small piece dark chocolate, grated
Instructions
- Process hazelnuts in food processor on high until mixture is almost like a nut butter.
- Add cacao powder, maple syrup, chia seeds, coconut cream, and Grand Marnier.
- Process until smooth.
- Pour the pudding into 3 separate tall martini glasses.
- Serve topped with shaved dark chocolate and crushed hazelnuts.
