Gluten-Free Apple Pear Galette
Baking is so satisfying. There is nothing more enjoyable than adding a bunch of ingredients to a bowl and then an hour or so later, pulling something out of the oven that has completely transformed into something so flakey, buttery, and tender – all with just a few ingredients. Call it magic or science, but it gives me all the feels when I bake. Especially when I bake gluten-free.
Diagnosed with Celiac Disease a few years ago, I thought my baking dreams were over. No more cupcakes, cookies, or pies. Right? Wrong! Gluten-free can be delicious! You just need to know how to use different ingredients like tapioca starch, brown rice flour, white rice flour, potato flour, etc. I dabble in making my own flour blends and using store-bought blends and I’ve used both in this gluten-free apple pear galette many times!
Galettes are wonderful for gluten-free baking because they are so forgiving. Haven’t heard of a galette? It’s essentially a rustic, free-form tart or pie. When you’re rolling out your dough and wrapping it around your filling, it’s okay if the dough cracks or tears. You just patch it up and keep going. Rustic is better in this instance. For this very reason, I love making galettes! The filling can be sweet or savory, but here, we’re using apples and pears for a sweet filling. The galette is really flakey and the apple pear filling is the perfect amount of sweet without being overloaded with sugar.
Serve the galette warm and top with vanilla ice cream for an extra treat!
Gluten-Free Apple Pear Galette
Ingredients
- 1 1/2 cup gluten-free flour blend (Bob's Red Mill 1:1 Baking Blend is what I used here)
- 1 tsp xanthan gum (if your blend does not already contain it)
- ½ cup unsalted butter, cubed and cold (can also use vegan butter or solid coconut oil)
- 1 tsp cinnamon
- ½ tsp kosher salt
- 1 tbsp brown sugar
- 4 tbsp cold water
- 2 small granny smith apples, sliced thin (about 2 cups)
- 1 ripe barlette pear, sliced thin (about 1 cup)
- 1 tbsp cornstarch or tapioca flour
- 1 tbsp brown sugar
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- ½ tbsp lemon juice
- pinch of salt
- 1 tbsp butter (or vegan butter)
- dash of cinnamon

Instructions
- In a food processor, add gluten-free flour, salt, brown sugar, and cinnamon, and pulse to combine. Add butter, pulse until butter is the size of peas, with some bigger pieces. Remove from food processor and place in a bowl, add in water until you are able to pinch the dough in between your fingers. Turn dough out onto a (gluten-free) floured surface and knead a few times. Pat into a flat circle and chill for at least an hour.
- To make the filling, combine apples, pears, cornstarch, brown sugar, lemon juice, and salt in a bowl and mix together.
- Preheat oven to 375ºF. Line a baking sheet with parchment paper.
- Roll out the dough to a 12-inch circle about 1/4 inch thick. Spoon filling into the middle of the dough. Crimp dough over the filling leaving a circle in the middle. Dot top with 1 tbsp of butter and sprinkle with cinnamon.
- Bake at 375ºF for 40-50 minutes, until crust is golden brown.
- Serve warm.
Notes
Home Chef Tip: You can easily make this tart a little savory by adding fresh thyme instead of cinnamon. Just swap the spices and you'll have a completely new dessert!
