No matter where you are right now, you know that spring is being too shy for her own good! I’m waiting for the cold snaps to stop so we can bust out the beautiful sun dresses and flip flops. On that note, I can’t wait for the frosted glasses of chilled, refreshing drinks on a patio. Generally, I try to stay away from having too many cocktails; not because of the alcohol, but because they always have syrups, high sugary sodas, or something along those lines.

Developing this particular recipe for a Cooling Cucumber and Blueberry Cocktail was exciting. Finally, a classic cocktail without the aforementioned sugar. Plus, how beautiful are those ribbons of cucumbers? Check the recipe notes for a quick “how to” and thickness of the ribbons (although they’re not a requirement to make the recipe).
Note: You probably can’t tell the color of the purée too well because the glasses are frosted, but the purée will be a light, barely colored pulp that strains out into an almost clear liquid.
Real Talks: If you can’t tell which gin to use, I would suggest that you use a higher quality gin (Hendricks?) because you’ll be able to really taste it. The flavors of blueberry and cucumber are very delicate, and there is no sugary soda to disguise a “bad” gin.
You can also opt out of using the blueberries and increase the amount of cucumbers by another 1/4 cup for an even stronger cucumber flavor, though the blueberries definitely add a little more natural sweetness to the cocktail!

- 1 cup lemon-lime sparkling water
- 7-8 blueberries
- 1 tspn honey/liquid stevia
- 1/4 cup peeled and chopped cucumber
- 2 tbsp lime juice
- 1.5 oz gin
- cucumber ribbons & blueberries to garnish
- In a small blender, blend together the blueberries, honey/liquid stevia, and chopped cucumber until a purée forms. Strain by pressing the pulp in a mesh strainer and catching the juice into a small bowl.
- Add half the cucumber and blueberry 'juice' to a cocktail shaker. Reserve the rest and divide it between two serving glasses. If using cucumber ribbons, add to the glasses now.
- Add the gin, ice, and lemon-lime sparkling soda to the cocktail shaker, and shake.
- Pour equal amounts into the glasses. Top off with ice and garnish with blueberries.
Home Chef Tip: Use a mandolin slicer to create beautifully thin ribbons of cucumbers. I set the slicer at 1/16".
