If there is one thing I love about the holiday season though, it’s entertaining!
There is something magical about having a group of people around for a holiday party. Music playing, fire going, wine or cocktails rolling, and sitting down together to celebrate your favorite food at the dinner table.
Entertaining during the holiday seasons doesn’t have to be stressful. I believe you just need some simple, fool-proof recipes that you’ve tried and tested to make a successful holiday gathering, as well as a simple and festive go-to cocktail! These Pomegranate Champagne Cocktails are my go-to entertaining drink of choice this year and I’m sure you and your guests will love them too.
Pomegranate Champagne Cocktails with Rosemary
Honestly, these pomegranate rosemary sparkling cocktails are so easy to whip up and they give off the perfect festive vibe! I wanted to make something that was simple, but highlighted some of my favorite things about the season; in particular, the colors red and green!
These sparkling cocktails also incorporate some of my favorite ingredients; pomegranate (aka the most festive fruit ever in my eyes), rosemary, gin, white rum, and a good pouring of Prosecco!
The base of these cocktails is a combination of white rum and gin, topped with sparkling pomegranate juice, and a beautifully-subtle rosemary simple syrup just to lend an extra sweetness to the tartness of the pomegranates. Topped with Prosecco, these cocktails are easily adaptable to suit your party’s needs, whether that be non-alcoholic, or increased quantities to feed a crowd!
Whether you’re celebrating Thanksgiving, Christmas, New Year’s Eve, a wedding, a birthday, or just want an excuse to have people around, these pomegranate rosemary sparkling cocktails should definitely be on your menu. Cheers!
Ingredients
- 1/2 cup of sugar
- 1/2 cup of water
- 1 sprig of rosemary, roughly chopped
- 1 oz gin
- 1 oz white rum
- 3 oz sparkling pomegranate juice
- 4 teaspoons of pomegranate seeds, divided
- 20 teaspoons of rosemary simple syrup, divided
- 1 bottle of Prosecco
- 4 sprigs of rosemary for garnish
Instructions
- Place sugar, water, and roughly chopped rosemary in a saucepan.
- Heat over medium-high heat, until sugar is melted and liquid is clear.
- Turn off heat, and let rosemary sit for 10 minutes to infuse.
- Place gin, rum, and sparkling pomegranate juice in a measuring jug.
- Stir until well combined.
- Add 1 teaspoon of pomegranate seeds to each of the 4 champagne glasses.
- Divide the gin, rum, and pomegranate juice mix evenly into the glasses.
- Top with Prosecco.
- Add 5 teaspoons of the rosemary simple syrup to each glass, stir lightly, and garnish with rosemary.
Notes
Home Chef Tip: This makes a great non alcoholic mocktail! Simply remove gin, rum, and Prosecco, and top with more sparkling pomegranate juice or soda water.
