Have you tried stuffed cabbage rolls before?

I first had Stuffed Cabbage Rolls when I was a child and my parents would order a take out Mediterranean platter from a local and very good Middle Eastern and Mediterranean restaurant called Bishop’s. There would be stuffed grape leaves, stuffed peppers, hummus, red onion slices, lemon, rice pilaf, and pita bread. This platter delighted all my senses and made lasting memories of what comfort food should taste like. My parents did well by exposing me to many different cultures through food and I am so grateful for it!

These Stuffed Cabbage Rolls are as economical as they are savory! They are not expensive to make because they are comprised of only lean ground turkey or beef, cabbage leaves, garlic, and onion, using condensed tomato soup for the tomato sauce.

Stuffed Cabbage Rolls

Prep Time: 20 minutes

Cook Time: 40 minutes

Total Time: 60 minutes

Yield: 8 stuffed cabbage rolls

Calories per serving: 1 cabbage roll

Ingredients

  • 1 cup cooked rice (1/3 uncooked rice)
  • 8 cabbage leaves
  • 1 lb lean ground turkey or beef
  • 1/4 cup chopped yellow onion
  • 1 egg, slightly beaten
  • 1 tsp Kosher salt
  • 1/4 tsp fresh ground black pepper
  • 1 10.75-oz can condensed tomato soup
  • Parsley flakes, Kosher salt, and fresh ground pepper for serving

Instructions

  1. In a large and wide pot, bring salted water to a boil, add the cabbage leaves, boil for 2-4 minutes. Leaves should be softened. Drain, set leave aside to cool.
  2. In a medium mixing bowl, mix the lean ground turkey or beef, 1 cup cooked rice, chopped onion, egg, 2 tablespoons tomato soup, Kosher salt, and pepper. Mix until combined.
  3. Divide the meat mixture evenly among the cooked cabbage leaves. Roll the cabbage leaves. You can secure them with a toothpick, if you want. If the cabbage leaves are ripped, just double them up with an extra cabbage leaf so that the ground meat filing will not come out during cooking.
  4. In a large skillet over medium heat, carefully place the rolled cabbage leaves in the skillet and pour the remaining condensed tomato soup over the stuffed cabbage leaves. Cover the skillet and bring to a boil over medium heat, then reduce heat to low. Simmer for 40 minutes. Baste the cabbage leaves with the tomato sauce periodically. After 40 minutes, serve and enjoy!

Notes

Home Chef Tip: After rolling the cabbage leaves, secure the rolls with toothpicks or kitchen string.

There are many egg replacements on the market. You can find them in the dairy section, baking section, and whole foods section of most grocery stores.

Here is my recipe for stuffed cabbage , I believe you'll find it very tasty, a little more work than the one posted but well worth the effort. I head of ripe cabbage 1. lb.ground chuck 90/10 1/2 lb.ground pork 1 cup cooked white river rice I medium yellow onion 1 large egg 4 cans of Campbell's Tomato soup Place cored head of cabbage into pot of boiling water to release leaves,as cabbage steeps in hot water remove from heat. Cook rice as instructions with this exception lightly salt & add 2Tbs butter into water Liquefy onion in blender Heat tomato soup with adding 1 can of water to 4cans soup Beat egg & add with liquefied onion to ground chuck & ground pork mix well Salt & pepper add cook rice to meat mix throughly Remove leaves from water carefully not to tear them pat dry , I use ice cream type scoop to put meat mixture into each leaf fold over to make cabbage roll, place into 9 x13 glass baking dish which you should add enough warm soup to cover bottom of. Continue till all meat mixture is used. Add remaining soup bake at 350 for 1 1/2 hrs covered Enjoy🙂 baking

Halupkees, eating them for 65 years! 2 more things I do . . add a pound of kielbasa, in chunks or slices, to the top of rolls, before baking or cooking. Next, cut up the rest of the cabbage into small pieces, use it all, no waste . . .pan fry in butter til very soft and cooked . . the add some buttered noodles, almost the same amount as cabbage, then add s/p, onion powder, more butter and stir about 3 or 4 mins til well mixed. You now have halushki. If you have halupkees, you gotta have halushki. Gives good mileage to a head of cabbage. Yumm!

Here is my recipe which is fantastic & I am American of Polish background so I really know good & average & bad stuffed cabbage. My Mother & Cousin made very good ones & I have found by making slight adjustments to their recipes a better product. Please give it a try I do believe you'll enjoy your efforts. 1lb ground chuck 90/10 1/2lb ground pork 1 head cauliflower 1 medium cooking onion 1 head cabbage 1 egg Salt / Pepper 1 large can San Marzano tomato sauce Core cabbage head place in pot cover with cold water bring to boil cover & remove from heat. Mix ground chuck & pork add finely grated onion salt &pepper beaten egg & grated cauliflower about 1 to 1/2 cups mix well. Seperate cabbage leaves cut out heavy vein fill each leaf with meat mixture, place in crock pot ( I use crock pot liners or bags ) continue till all mixture is used , add can of tomato sauce, set crock pot to high for 4 hrs then to low for 2 hrs. Serve with mashed potatoes , better yet if you can resist just refrigerate cabbage once it's cooled and reheat next day ( cabbage always better next day ) I do believe that you'll truly enjoy the fruits of your labor . Oh you'll never know the difference between rice & cauliflower in these cabbage rolls. ( No Carbs )
