Hello! For those who don’t know me, I am Kate from Babaganosh. My family just had a lot of changes recently – we moved to the Bahamas in December for my husband’s job and I quit my job just a few days ago to stay home full time with our baby. We are all super thrilled about the slower pace of life here on the island as opposed to New Jersey. We plan on focusing on quality time with our little family instead of rushing to get to daycare and to work every morning. Of course, we plan on lots of time at the beach.
This is the first time where my husband and I are not both working, so we had to get on a budget. In a country where food is pretty expensive, we have to get creative and make the most out of each ingredient. I’ve been choosing groceries that are more affordable, but still have a ton of flavor. One of our favorite ingredients is chorizo – spicy, flavorful smokey sausage that is reasonably priced in most grocery stores. It is very versatile and can be used to bring a lot of flavor to most dishes, like this simple Chorizo Cheesy Grits with Crispy Broccoli.
Budget-Friendly Chorizo Cheesy Grits + Crispy Broccoli
In this recipe, I pair chorizo with grits and add a side of crisp-tender broccoli for a bit of greens. This whole dinner costs around $10 to make and will get you four delicious servings. That’s pretty good, don’t you agree? Grits are crazy cheap, especially if you are able to buy them in bulk at your wholesale club store. A 5-pound bag will make many meals, and you can always dress them up with different types of cheeses, proteins, and garnishes.

Ingredients
- 1.5 cup quick-cooking grits
- 3 cup water (or as much as the grits packaging requires)
- 1 cup shredded cheddar cheese (or your favorite cheese that melts easily, such as Monterrey Jack or Pepper Jack)
- 4 links chorizo sausage (about 1 lb)
- 1 large broccoli head
- 2 tbsp vegetable oil
- 1 scallion, diced
Instructions
- Cut the chorizo into 1 inch pieces.
- Cut the broccoli into individual florets.
- Prepare the grits according to the package. When the grits are finished cooking, stir in the cheese until it is melted.
- Heat the vegetable oil in a large skillet. Add the chorizo and broccoli florets and cook over high heat for 8-12 minutes, stirring often.
- Remove from heat and serve over cheesy grits, garnishing with diced scallion.
Notes
Home Chef Tip: Stretch your dollar by using chorizo in other recipes such as soups and stews, where the smoky chorizo sausage will add a ton of flavor to the broth. Just brown the chorizo first in a skillet and then add it to your soups and stews.
