These Roasted Pancetta Parmesan Green Beans are the perfect side dish for an elegant dinner, yet an easy, quick, one-pot dish you can prepare for a weeknight meal also. It’s completely thrown together on a single sheet pan, can be prepared ahead, and takes less than 30 minutes to make.
Personally, side dishes stress me out. I love to cook and entertain, but I’d much rather focus on the shining-star entrée or decadent dessert than worry about all the other things in between. (Don’t even get me started on appetizers!) Whether I’m meal planning for family weeknight dinners or hosting a dinner, I feel like side dishes always play second fiddle to what I really need and want to be concentrating on.
Fortunately, my family doesn’t have to exist on entrées and desserts alone because roasted vegetables and I are soulmates. Since they are so effortless to throw together and turn out beautifully every time, roasted veggies are my absolute go to for side dishes. It’s hard to mess them up even with a chaotic kitchen and distractions (AKA children). Plus, you can serve them at room temperature so timing is never an issue.
Roasted Pancetta Parmesan Green Beans Recipe
My Roasted Pancetta Parmesan Green Beans were created because I needed something strikingly delicious, yet quick and easy to make for a friend’s holiday potluck. This dish did not get lost in all the other yummy food everyone brought because of the dish’s unique flavor. The salty pancetta pairs wonderfully with the tangy lemon juice, rich Parmesan cheese, and caramelized beans. Everyone at the party gobbled it up, and there were some definite revisits for seconds.
This stand out side dish doesn’t taste like it was thrown together in five minutes, and the pancetta adds to the “wow” factor. This is the perfect recipe to have in your side dish arsenal. You have my permission to just smile, take in the compliments, and no one has to be the wiser as to how simple this dish was to make.
Ingredients
- 2 lbs fresh green beans, washed and trimmed
- 4 cloves garlic, peeled and chopped
- 5 ounces pancetta, chopped
- 1 lemon, juiced
- 1/2 cup freshly grated parmesan
Instructions
- Preheat oven to 475ºF. Drizzle a little olive oil on the baking sheet and spread around to grease the sheet.
- On the prepared baking sheet, combine the green beans, garlic, and pancetta. Roast in the oven for 10 minutes.
- Stir and flip with spatula and then roast for an additional 12-15 minutes until beans are roasted and pancetta is crisp. Season with salt and pepper.
- Pour lemon juice and parmesan over hot green beans and adjust seasoning, if needed.
Notes
Home Chef Tip: Pancetta can be a little pricey to buy. If you are making this for a weeknight meal or just want to save money, you can substitute chopped bacon for the pancetta.
