This recipe takes about 45 minutes to put together, most of it being cooking time, so you don’t have to worry about devoting a large chunk of your evening to making dinner. These burgers are great for meal planning because you can form the patties ahead of time and freeze until you need them. Once you are ready to cook them, just pop them in the oven or on the grill and serve! This recipe makes six large patties, but you can easily double it if you’re hosting a tailgating party for friends.

One of the biggest problems that people run into with meatless burgers is that they tend to fall apart easily. This is especially on the grill, which can end up ruining your entire burger experience. To avoid this, freeze your burger patties for at least one hour before cooking so they stay together!

5-Ingredient Sweet Potato Burgers with Herb Carrot Fries

Ingredients

    For the burgers:
  • 2 large sweet potatoes
  • 1 can cannelloni/white beans
  • 1/4 cup breadcrumbs
  • 2 tbsp flour
  • 1 tbsp chili powder
  • For the fries:
  • 1 bag whole carrots, peeled and rinsed
  • 1 tbsp olive oil
  • Herbs of choice

Instructions

  1. Peel and roughly chop sweet potatoes, then boil for 10 minutes or until soft.
  2. In a large bowl, combine sweet potatoes and beans. Mash them up with a pastry cutter or fork.
  3. Add in breadcrumbs, chili powder, and flour. Mix thoroughly.
  4. Scoop up in 1/3 cups, forming each scoop into patties that are around 1/2 inch thick.
  5. Pour out some extra breadcrumbs on a plate, and coat each patty.
  6. Arrange on a baking sheet, and bake at 375°F for 30 - 35 minutes.
  7. While cooking, peel carrots and cut into 3-4 inch "fries".
  8. Toss in a zip top bag with olive oil and herbs, then pour out onto a baking sheet.
  9. Bake with your burgers for 20 minutes.
  10. Once fully cooked, serve burgers on buns with your choice of toppings and a side of carrot fries.
