I am completely on board the zoodle train right now! You could put just about anything on zucchini noodles and I’d probably love them, but this Artichoke Pesto Zoodle Salad has my heart (and my stomach) right now. Not only is this gluten-free dish made with two ingredients that provide great health benefits, it tastes more like a carb-filled pasta salad than the leafy green salads I’m used to. This recipe is quick and easy to whip up and it will last in the fridge for a couple of days making it the perfect recipe to meal prep. I ate it for lunch for three days and it tasted just as delicious on day three as it did on the day I made it.
Gluten-Free Artichoke Pesto Zoodle Salad
This dish is the perfect matchup of delicious ingredients with healthy benefits. These spiralized zucchini noodles are the perfect match for artichoke hearts. When they’re slathered in pesto, it just gets better and better. Oh, and don’t forget the cheese!
All that’s missing is a slice of garlic bread, but that might take away from the fact that this Artichoke Pesto Zoodle Salad is definitely a healthier classic to its carb-filled counterpart. Nonetheless, you’ll finish this dish feeling both healthy and full. I think the next time I attend a casual party or potluck, I’ll bring this as a side dish. After all, I don’t know about most people, but I’ll take this over a traditional leafy green salad any day.
Zucchinis have many different health benefits. Most notably, they promote eye health and contain high amounts of Vitamin C. Artichoke are also considered a “superfood” full of antioxidants, plus they contain high amounts of fiber. Some studies report that eating artichoke hearts is good for heart health. Basically, these two ingredients combined with the great flavors in pesto make for a very healthy salad choice that you’ll actually want to eat!
Ingredients
- 2 medium-sized zucchini
- 1 can artichoke hearts, drained
- 1/2 cup pesto
- 1/2 cup parmesan cheese
- Salt and pepper, to taste
Instructions
- Spiralize the zucchini to create zoodles and move to a bowl or plate.
- Drain the liquid from a can of artichoke hearts and lightly chop into bite-sized pieces. Add to zoodles.
- Add the pesto and mix well until ingredients are coated in pesto. Salt and pepper to taste.
- Sprinkle generously with parmesan before serving.
