Celebrate fall with this moist, tender White Chocolate Orange Cranberry Cake. Flavored with fresh orange zest and studded with fresh red cranberries, it’s the perfect balance of sweet and tart flavors with a white chocolate glaze!

What reminds you of fall, besides the warm hues and cool breeze? For me, there are so many things like spiced candles, pumpkins, falling leaves, Halloween, and the list just goes on! I have to say that the combo of orange and cranberry is one of those things that hits the spot. Cranberry and orange are classic holiday ingredients and I have combined these two to make a yummy Orange Cranberry Cake recipe that tastes delicious and is full of seasonal flavors.

White Chocolate Orange Cranberry Cake

This White Chocolate Orange Cranberry Cake is a very simple and straight-forward recipe with no fancy ingredients involved. Begin the recipe by sifting the dry ingredients together. Sifting removes the lumps and aerates the flour so that it blends well when combined with other (wet) ingredients. In a separate bowl, cream butter and sugar together until light and fluffy.

Add the eggs into the butter mixture one at a time. Make sure the first egg is well blended in the batter then add the other one. Finally, add the rest of the ingredients into the flour mixture and make a lump-free batter.

Toss cranberries in dry flour and fold them into the batter. Pour the batter in a greased bundt pan and bake as directed. When the cake is done, allow it to cool before un-molding it onto a wire rack. Generously drizzle with White Chocolate Glaze and sprinkle some fresh orange zest and dried cranberries on top!

The tartness of fresh cranberries pairs well with the sweetness of the white chocolate glaze. It’s a perfect cake to showcase seasonal flavors. Cut yourself a big slice and enjoy! A piece of this yummy cake begs for a cup of hot coffee or tea on the side.

White Chocolate Orange Cranberry Cake

Prep Time: 15 minutes

Cook Time: 45 minutes

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • A pinch of salt
  • 1/2 cup unsalted butter
  • 2 tsp orange zest
  • 3/4 cup orange juice
  • 2 large eggs
  • 1/2 cup buttermilk
  • 2 tsp vanilla extract
  • 1 1/4 cup fresh or frozen cranberries
  • 3/4 cup white chocolate candy
  • 3 tbsp cream
  • 3/4 cup sugar
  • Dried cranberries for garnish

Instructions

  1. Preheat oven to 350°F. Grease a bundt pan with cooking spray.
  2. In a large bowl, sift together flour, baking powder, baking soda, and salt. Set it aside. Save a tablespoon of dry mix to coat the cranberries.
  3. Cream butter and sugar in a separate bowl, until light and fluffy.
  4. Add eggs, one at a time, to the creamed mixture and make sure the first one is absorbed well into the batter before adding the other egg.
  5. Stir in orange juice and vanilla extract.
  6. Add orange zest and mix in the sifted dry ingredients.
  7. Mix until everything is just blended.
  8. Combine cranberries and the saved flour in a bowl. Gently shake to coat them well. This will prevent cranberries from sinking to the bottom of the cake.
  9. Pour batter into the greased bundt pan.
  10. Bake for 45-50 minutes or until a toothpick comes out clean.
  11. Remove from oven and allow to cool on a wire rack for 15-20 minutes.
  12. Run a butter knife around the cake edges and gently un-mold the cake from the pan.
  13. Allow it to cool on a wire rack.
  14. Meanwhile prepare the frosting. Heat chocolate in a microwave bowl for a minute, stirring every 30 seconds. Continue to heat until the chocolate is melted.
  15. Combine all the frosting ingredients in a bowl and beat well.
  16. Using a spoon or a piping bag, drizzle frosting all over the cake.
  17. Top with orange zest before serving.

Notes

Home Chef Tip: To avoid that 'eggy' smell in a cake, eggs should be added one at a time. Make sure it's well mixed in the batter before adding the next one. If you add all the eggs at once, that 'eggy' smell will linger.
