Gingerbread Waffles with Cinnamon Whipped Cream

These simple Gingerbread Waffles make the perfect warm and comforting breakfast for the upcoming holiday season. They are subtly spiced and filled with the flavors of pumpkin and molasses. Served with cinnamon whipped cream or butter and syrup, your friends and family will love this festive meal!

Here we are, just weeks away from Thanksgiving. I guess the saying is true; time flies when you’re having fun. This year has been a whirlwind (having two young children will do that!). I am so excited for this holiday season. My four-year-old son really “gets it” this year, and he is thrilled about all the fun to come over the next month and a half.

Gingerbread Waffles with Cinnamon Whipped Cream

I try to teach my children that the holidays are about more than gifts and Santa Claus. It’s about making memories and creating traditions. I believe the kitchen is the perfect place for children to create and share. Breakfast is a fantastic meal to cook with children, and these waffles are fun and family friendly!

With the help of my son, we whipped up these Gingerbread Waffles. He helped stir the dry ingredients and whisk the wet ingredients (don’t worry; we left the hot waffle iron up to me). His mind was really blown when we made cinnamon whipped cream to top our waffles! What kid wouldn’t devour a waffle topped with whipped cream? He was so proud of our delicious creation.

The addition of whipped cream makes these Gingerbread Waffles feel a little fancy and helps elevate them from an everyday breakfast. These waffles would be fantastic on Thanksgiving or Christmas, or any chilly morning this fall and winter. They are filled with warm spices and a subtle molasses flavor. The cinnamon whipped cream perfectly compliments the waffles, but they’re just as good with butter and warm maple syrup.

However you choose to enjoy these Gingerbread Waffles, they’re bound to make your holiday season extra sweet.

Ingredients
  • Gingerbread Waffles:
  • 2 cups all purpose flour
  • 2 ½ teaspoons ground cinnamon
  • 2-3 teaspoons ground ginger (depending on how strong you want it)
  • ⅛ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • 3 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup milk
  • ½ cup molasses
  • ½ cup brown sugar
  • 3 eggs
  • ⅔ cup pumpkin puree
  • 4 tablespoons melted butter
  • Cinnamon Whipped Cream:
  • 1 cup cold heavy cream
  • ¼ cup powdered sugar
  • ¼ teaspoon ground cinnamon (or more to taste)
Instructions
  1. Gingerbread Waffles:
  2. In a medium bowl, combine flour, spices, baking powder, and salt.
  3. In a large bowl, whisk milk, molasses, brown sugar, eggs, pumpkin puree, and melted butter until combined. Add dry ingredients to the wet and stir until just combined, being careful not to over mix.
  4. Pour batter into greased waffle iron and cook according to manufacturer instructions. While the waffles are cooking, prepare whipped cream.
  5. Cinnamon Whipped Cream:
  6. Using a hand mixer or stand mixer fitted with the whisk attachment, whip heavy cream, powdered sugar, and cinnamon on medium-high speed until soft peaks form.
  7. Serve waffles with a dollop of cinnamon whipped cream or butter and maple syrup.
