Zoodles are a great option for the Keto Diet, low-carb eating, as well as a grain-free or Paleo Diet. Zoodles are easy to make at home by spiralizing the zucchini. Simply follow the instructions of your spiralizer or cut the zucchini with a chef knife into thin lengthwise strips or make long peels down the length of the zucchini using a vegetable peeler. You could easily customize this Chicken Red Thai Curry Zoodles to vegan-friendly just by not adding the chicken to the curry. Heat a saucepan, heat oil, add red curry paste, and cook for 2 – 3 minutes on a low flame. Add veggies of your choice and cook for 3 – 4 minutes. Add vegetable broth, coconut milk, and bring it to a boil. Add zucchini spirals and cook until the zoodles become soft. Garnish with crushed peanuts and spring onion, and serve hot.
Ingredients
- 1/2 lb Boneless, Skinless Chicken Breast
- 1 tbsp Thai Red Curry Paste
- 6 oz Thick Coconut Milk
- 1/2 cup Chicken Broth
- 1 cup Broccoli Florets
- 1 cup Green Beans, Chopped
- Salt to taste
- 1 tbsp Vegetable or Coconut Oil
- 1 tsp Garlic Finely Chopped
- 1 1/2 cups Zucchini Spirals
Instructions
- In a saucepan, heat oil, add finely chopped garlic, and stir fry until the nice aroma comes out.
- Add red curry paste and stir fry for a couple of minutes. Add sliced chicken, salt, and cook until the chicken gets cooked.
- Add broccoli florets, green beans, and stir fry for 3 - 4 minutes. Add chicken broth, coconut milk, and bring to a boil.
- Add zucchini spirals and boil for 3 minutes and serve.
Notes
Home Chef Tip: Add veggies of your choice. You could replace the thick coconut milk with light coconut milk.
