Buffalo Chicken Blue Cheese Bites

Buffalo Chicken Blue Cheese Bites

Ingredients

  • 1 1/2 lbs chicken thighs
  • 1 tbsp olive oil
  • 1/2 cup buffalo chicken wing sauce
  • 1 cup crumbled blue cheese
  • 1 (9-inch) round pie dough, raw
  • Ranch, for dipping

Instructions

  1. Preheat the oven to 375ºF. Brush the chicken thighs in olive oil. Arrange in a baking dish and bake for 20-25 minutes or until juices run clear. Remove from oven, let cool slightly, then shred.
  2. In a mixing bowl, combine shredded chicken, wing sauce, and blue cheese.
  3. Prepare a baking sheet with parchment paper. Lay the pie dough on a flat, clean surface. Spoon about 1/2 cup of the chicken mixture down the dough in a 1-inch wide "line". Roll the dough around the chicken to create a log. The log should be about 1-1/2 inches thick. Cut the log into 6 equal segments. Repeat with the remaining dough and chicken.
  4. Arrange the bites on the baking sheet. Bake for 15 minutes or until dough is lightly browned. Serve with ranch.

Notes

Home Chef Tip: Do not substitute the chicken thigh meat for chicken breast meat for this recipe. The chicken thighs are so much moister and juicier and that makes this recipe perfection!

    The instructions about the pie dough aren't clear. You say to buy 1 - 9" pie dough round and then you say place 1/2 cup chicken mixture down the center of the dough and repeat with remaining chicken mixture and dough. What dough? Are we supposed to cut the round piece of dough into two? How many pieces of dough do we really need. A picture of this step would be very helpful. Thank you!

      Yes, you can just cut the dough in half and follow the instructions from there. Enjoy!

      I'm assuming they meant to use more than one pie crust. Boughtened dough has two in the box.

    I made these over the weekend and they were fantastic! I tried rolling the piecrust out a tiny bit trying to make it into something closer to a square. Was able to get a whole baking sheet packed full of bites and had a little bit of the mixture left over. Things were a little messy during the rolling/slicing process, but it all worked out well in the end. Will definitely do these again soon!

    I tried this recipe with a substitution. Instead of using pie crust I used a 9x13 pizza dough I had in the freezer, Rolled it the same and sliced it, Awesome !!!! Got more slices also, The pizza dough was a thin crust so it worked
