This colorful and inviting Strawberry and Avocado Summer Fruit Salad is a refreshing summer snack that will help you maintain that beautiful bikini body you’ve been working diligently to achieve.
Warmer days are on the horizon (or if you’re in So Cal like me, they are sporadic and can’t decide whether they’re coming or going) and refreshing snacks that maintain the bikini body you’ve been working on since January are in order. To me, fruit salads are the epitome of a summer snack and this Strawberry and Avocado Summer Fruit Salad is no different. They’re refreshing, guilt-free, friendly on the waistline, and count towards the food pyramid! I like to imagine myself enjoying a bowl poolside, on a lounge chair, in a bikini, while someone is fanning me. I digress.
This Strawberry and Avocado Summer Fruit Salad came about when I found myself with a surplus of strawberries, mangoes, bananas, and avocados. The thought of finishing them individually was a little daunting, so I needed a different approach. I loved the colors each fruit imparted and thought that they would make a beautiful confetti-like fruit salad. Although I briefly questioned the addition of the avocados, I proceeded anyway because I’m a food blogger and I experiment.
To my delight, the flavor profiles of each fruit mingled nicely, without any one fruit overpowering the other. The avocados, in combination with the bananas, added a light and creamy coating to the salad.
In order to extract all the sweet juices from the fruits and avoid any surprise astringent bites, I added a small drizzle of blue agave nectar. This worked out beautifully. It turned the fruit salad from a regular bowl of diced fruits into nature’s candy! It really made all the difference. To maximize the strawberry juice extraction, add the agave to the strawberries first and set it aside while you peel and dice the rest of the fruits. The extra time will allow the sugars from the agave to draw out excess strawberry juices.
One last tip: Make sure the avocados are added last to prevent any browning.
Make this Strawberry and Avocado Summer Fruit Salad for your next backyard gathering or potluck or just because. The kids (and adults) will be lining up!
- 1 pound strawberries, hulled and quartered
- 1 tablespoon agave nectar
- 2 ripe mangoes
- 2 ripe bananas
- 2 ripe avocados
- To a large bowl, add the strawberries and drizzle with the agave nectar. Stir. Set aside.
- Peel and dice the mangoes and add to the bowl. Stir.
- Peel and slice the bananas into ¼" discs. Add to the bowl and stir.
- Peel and dice the avocados. Add to the bowl and stir. Serve immediately.
