This delightful Vegan Coconut Cashew Snack Wraps recipe is a seven-ingredient afternoon snack that is both crunchy and sweet while being gluten free, vegan, and refined sugar free.
Kids love afternoon snacks; though to be fair, I’m pretty sure adults love them just as much. A good afternoon snack is going to make that time between lunch and dinner fly by. When I was working in an office, I always looked forward to my afternoon snack. I would gobble up my lunch by 11am, and patiently await an appropriate time for my afternoon snack.
Unfortunately I did not have a properly equipped office kitchen and was mostly limited to dry nuts and fruit. Luckily for me, that is no longer the case. With a full kitchen at my disposal, I was able to easily whip up these Vegan Coconut Cashew Snack Wraps.
If you thought tortillas were only for savory dishes, welcome to a whole new world of tortilla recipes. Turns out, tortillas work just as well for sweet recipes. These snack wraps come together in literally minutes and you can feel free to add your favorite nuts, fresh fruit, etc.
Vegan Coconut Cashew Snack Wraps are Gluten Free!
I opted for a few ingredients including roasted cashews, almond butter, sliced almonds, thinly sliced apples, maple syrup, and toasted coconut flakes.
Coconut flakes are the best, and my new favorite crispy snack. I buy the unsweetened ones and toast them in the oven myself at 350ºF for about 10-15 minutes. You can eat those crispy, chip-like, toasted crunchy coconut flakes on their own or add them to something else – like these afternoon snack wraps.
These snack wraps are prepped in no time at all with almond butter (which as long as you spread out all along the edges of the wraps also works as a glue to keep the wraps together) as the base, then a light sprinkling of roasted cashews, toasted sliced almonds, maple syrup, and thinly sliced apples.
Heat up the coconut oil in a pan and then lightly pan fry the rolled up snack wraps on both sides until browned. These are the perfect mid afternoon snack for kids and adults. Everyone will love the crisp, crunchy flavors and the sweetness from the apples and maple syrup.

Ingredients
- 4 small vegan, gluten-free corn tortillas
- 4 tbsp almond butter
- 4 tbsp roasted cashews
- 4 tbsp sliced almonds
- 1 small apple, quartered and thinly sliced
- 4 tsp maple syrup
- 1 tbsp coconut oil
Instructions
- On each tortilla, spread 1 tablespoon almond butter.
- Sprinkle each tortilla with 1 tablespoon roasted cashews, 1 tablespoon sliced almonds, 1/4 of a small apple, and 1 teaspoon of maple syrup.
- Repeat with all 4 tortillas and roll each one up tightly.
- Heat coconut oil over medium heat.
- Cook each tortilla for a few minutes on both sides until lightly browned.
- Cut in half and serve.
Notes
Home Chef Tip: To help the tortillas stay together, make sure to spread the almond butter along the edges so this can work like the glue holding the tortilla rolled up.
