It’s that time of year and school is back in session! That means brutal wake-ups at the crack of dawn, shuffling kids back and forth to school, and long pick-up line chronicles. Even with those struggles one of the most challenging obstacles that most parents face is what to pack for lunch. There is a constant need to find new foods that will keep them interested. Once that hurdle has been crossed, there lies one more challenge ahead. That’s packing food that will maintain its freshness and integrity during the long hours before lunch. Even the most appealing lunch can give in to the dreaded lunchbox and it’s changing temperatures. Luckily this snackable Cheesy Carrot Spread recipe maintains the delicate balance between tasty and healthy, plus it is lunchbox friendly!

Hot foods can be difficult to pack, especially with young children, and cold foods require an ice pack to keep it at the right temperature. With all of the aforementioned challenges, it’s no wonder why so many parents are choosing not to brown bag it and opt for school lunches instead. I’m here to tell you that all hope is not lost. This is coming from the mom of a picky five year old whose sole decision making tool is to simply press food against his lips to determine whether it’s worth his while.

I’ve faced all of this head on by creating super easy and tasty school lunches like this Cheesy Carrot Spread recipe that passes the test. Sandwiches are the easiest route to go when it comes to school lunches. Be mindful not to pack a sandwich too often though or your kids will become tired of it. Peanut butter and jelly is everyone’s go-to sandwich, and while I do make those every once in awhile, I’ve came up with different spreads to use in place of the classic.

I’ve grown up eating a version of this cheese spread and my son loves it, so it was a no brainer that this would be in rotation. I love to sneak vegetables in wherever I can, because well, they are good for you and you can never have too many vegetables! I add finely shredded carrots into the spread and it is undetectable. My picky eater was completely unaware of that there was a bit of goodness tucked right. This smooth and creamy Cheesy Carrot Spread holds up well at room temperature and can even be made the night before to save time in the mornings!

Ingredients

  • 8 oz sharp cheddar cheese, room temperature
  • 2 oz cream cheese, room temperature
  • 1 clove garlic, grated
  • 1 carrot, finely shredded

Instructions

  1. Place all ingredients in a food processor and pulse until smooth.

Notes

Home Chef Tip: To spice things up a little add a dash of hot sauce or buffalo sauce.
