Combining cucumbers, hummus, and cheese makes for an excellent flavor combination. This might seem like a surprising one at first, but once you have one bite, you won’t be able to stop snacking on these Low-Carb Cucumber Hummus Bites. The first time I saw these ingredients together was in college. My roommate, who was a vegetarian, used to frequently make hummus, cheese, and cucumber sandwiches for lunch. At first the combination sounded a bit odd to me. Just hummus, cheese, and cucumbers? Try it, she said. I did, and loved it because the flavors just really work together! The crunch of the cucumbers with the creamy, smooth hummus and the sharp bite of the cheese is simply amazing. For a vegan version of the recipe, substitute vegan cheese, but for the cheese lovers, use an extra sharp cheddar for maximum bite.
