I’m a big fan of snacking! Who isn’t, right? With two teens in the house, snacks are a big deal around here. So I’m excited to share an easy, healthy snack idea for this, my first post for SoFabFood. One snack that my daughter loves to eat at any time of day is quick, easy, and delicious nice cream. She’s been enjoying it for years, and that’s one of the great things about it. It works for any age, from toddler to teen and beyond. Nice cream is the perfect snack for after school when the family is on the run to events like soccer or dance. Just keep your favorite fruits in the freezer at the ready. We particularly love to make Cherry Chocolate Nice Cream because it mimics one of my favorite ice cream flavors. Plus cherries and chocolate are a classic combination.
What gives this dairy-free dessert its creaminess?
For extra-creamy nice cream, you’ll want to include frozen bananas. This recipe also calls for frozen cherries. Making it couldn’t be easier. Just add the frozen, sliced banana and cherries to a food processor and blend. Be sure to slice the bananas before or after freezing to ensure your food processor can handle them efficiently. Be forewarned, it gets a bit noisy! In seconds, though, your food processor will blend the mixture into a creamy, ice cream-like texture. Then, all you have to do is scoop your nice cream into a dish and stir in the chocolate chips. Easy peasy.
Nice cream is naturally gluten free and vegan too!
This ice cream alternative is also naturally gluten free and vegan making it the perfect after-school snack if friends stop over. Just be sure to source chocolate chips or chunks that are free of gluten and dairy. It’s also quite tasty without the chocolate chips. Feel free to add other toppings if you wish. Shredded coconut works nicely. I like to add healthy seeds and flax to recipes when possible too, like I did with my favorite vegan oatmeal cookies.

Ingredients
- 2 frozen, sliced bananas
- 1 cup frozen cherries
- 1/4 cup semi-sweet chocolate chips or chocolate chunks
Instructions
- Add banana slices and 3/4 cup of cherries to a food processor.
- Blend until thick and creamy.
- Add remaining cherries.
- Pulse until cherries are broken up but chunks remain.
- Transfer mixture to two serving dishes and stir in chocolate chips or chunks.
