What’s so special about this 30-minute meal?

The low-sodium fried chicken chunks are crispy on the outside and tender on the inside. The chicken is lightly fried in avocado oil to crispy perfection. The pineapples and red bell peppers add color, fresh flavors, and crunch, and the rice adds a light carb to the dish to round it out. Top all of that with a refined sugar free sweet sour sauce and you have a meal that can’t be beat!

I made this a few nights ago. Is the water amount correct for the chicken batter? When followed, it was rock hard and not enough liquid. I had to add another 1/2 cup of water. Not sure the consistency was correct. Any suggestions?

Make sure you use "bread flour" and the consistency works great for us, but if you find you need to adjust it to make it work, that's perfectly fine! Hope you enjoyed it either way!

I did use bread flour. Adding anaddirio al 1/2 cup water helps. Made it again. Tonight. I really look forward to making this, tastes great! Thank you.
