Hi, I’m Natasha from Lovely You Blog and I’m so excited to share this summer-friendly Grilled Carrot Arugula Melon Salad recipe with you. Now I don’t know about you, but summer is my favorite time of the year for eating salads! Since variety is the spice of life, summer offers so many options for in-season fruits and vegetables that can be used to create the perfect seasonal salad. All kinds of different melons are available which makes this salad even easier to make.

Grilled Carrot Arugula Melon Salad Recipe

I can remember as a child, as soon as summer hit, my dad would bring home huge watermelons. He cut them precisely into those beautifully-perfect wedges and then started passing them out to me and my sisters. All this took place outside of course because there were no utensils involved when eating them. We were a happy, sticky mess afterwards! So watermelons hold a special sentimental place in my heart. I also love cantaloupe and honeydew melons and those are the main players in this Grilled Carrot Arugula Melon Salad.

I’m using arugula as a base for this Grilled Carrot Arugula Melon Salad. Part of the green leaf vegetable family, it is highly overlooked, but it is so yummy and so full of healthy benefits. It also smells good. Now all of the ingredients for this salad are in season for summer and you can pick them up from your local farmers market or natural grocer: arugula, watermelon, cantaloupe, honeydew melon, and carrots. For the melons, I picked up a container of mixed melons from my local grocery store; they are deliciously fresh and cut right in the store. To top this refreshing salad off, I’m using crumbled sun-dried tomato and olive feta cheese. This salad is sure to refresh your taste buds this summer season!

Arugula Melon Summer Salad

Ingredients

  • 2 cups arugula
  • 2 cups mixed melon (watermelon, cantaloupe, and honeydew)
  • 1 tsp butter
  • 2 large carrots
  • 2 tsp sun dried tomato and olive flavored feta cheese

Instructions

    For the Grilled Carrots:
  1. Clean and cut carrots into 2 inch pieces, slice in half. Coat with butter, grill for 10 minutes in a grill pan. Let cool, then grate.
  2. For the Salad:
  3. Build your salad by adding the arugula to your bowl.
  4. Cut melons into small, thin squares and add to your bowl.
  5. Add your grilled carrots.
  6. Top your salad off with crumbled feta, or the cheese of your choice, as well as your choice of dressing.

Notes

Home Chef Tip: To add a bit of sweetness to this salad, combine the butter with a teaspoon of brown sugar to coat the carrots prior to grilling.
