This delightful Summer Berry Salad is made with arugula, strawberries, tomatoes, blueberries, raspberries, corn, onion, goat cheese, and basil, then topped with a homemade Creamy Raspberry Dressing that you’ll truly fall in love with!
I’ll always remember the very first salad dressing I ever made. I was in college living with my then-boyfriend in an apartment that was less like an apartment and more like a toy house made of cinder blocks. The kitchen was ten square feet of tile floor with a sink and a fridge that was definitely an afterthought. As if the builders were like, “Oh yeah, some college kids cook.”
Don’t worry, builders. I didn’t cook. I ate snacks or grabbed food out. Cooking was not yet a thing for me.
Until one day I ended up with extra lettuce and some strawberries in the fridge. And I was hungry. And Mike usually figured out what was for dinner, so it was my turn for a change. I grabbed three ingredients that we had on hand – olive oil, balsamic, and raspberry jam – and mixed them together. I threw the salad and strawberries into a bowl.
It was amazing.
That silly salad with a whopping total of five ingredients opened my eyes to the world of salad. And salad dressing. There is so much you can do! That’s what sparked my interest in cooking and, more specifically, making salads awesome. This dressing is a throwback to that first one – with raspberry jam! Of course, we’ve moved on from those college days and my salads are a bit more grown up, but the principal is the same.
Here, we’re using fresh summer fruit like strawberries, blueberries, and raspberries and tossing them with some of my other seasonal favorites, like corn and cherry tomatoes, to make a lightened up lunch or side salad.
Home Chef Tip: To save time, the dressing can be made up to two days ahead - just cover and refrigerate until you're ready to serve!
Ingredients
- 8 cups arugula or spring lettuce mix
- 1 cup sliced strawberries
- 1 cup cherry tomatoes, halved
- 1/2 cup blueberries
- 1/2 cup raspberries
- 2 ears of corn, cooked, kernels removed
- 1/2 red onion, thinly sliced
- 8 ounces goat cheese, crumbled
- 2 tablespoons fresh chopped basil
- 1/2 cup sour cream
- 1/4 cup plain Greek yogurt
- 2 tablespoons raspberry jam
- 1 tablespoon lemon juice
- 1 tablespoon apple cider vinegar
- Salt, to taste
Instructions
- In a bowl, whisk together all dressing ingredients.
- Toss all salad ingredients together in a large mixing bowl. Just before serving, drizzle lightly with dressing and toss to coat. Spoon into salad bowls and serve cold.
