These Loaded Greek Street Fries taste great with homemade or frozen fries. That’s right, no one is going to judge you for using frozen fries. Just make sure to leave your fries in the oven for a few extra minutes to ensure they are nice and crispy. After all, one of the things that makes a great food truck meal is perfectly cooked fries. Feta is already a little salty so there’s no need to add salt to your french fries.
While you wait for your fries to be done, chop up tomatoes, red onion, green bell peppers, olives, and banana peppers.

Feta on top of feta? Yes, please. When it comes to food truck indulgences, it’s all about the excess. The fries are going to taste amazing without it, but you’ll never regret dipping them. Feta is mixed with garlic, crushed red pepper flakes, ricotta, and Italian dressing. I first experienced a feta dip like this while enjoying street fries with a friend. I immediately knew this was something I would have to make at home.
Ingredients
- 1 lb French fries
- 1/4 cup diced red onions
- 1/8 cup chopped banana pepper rings
- 1/4 cup diced green peppers
- 1/8 cup sliced olives
- 1/4 cup diced tomatoes
- Crumbled feta cheese (for sprinkling on top of the fries)
- 4 oz crumbled feta cheese
- 1/4 cup ricotta cheese
- 1 tbsp Italian dressing
- 1/2 tsp red pepper flakes
- 1 clove minced garlic
Instructions
- Bake french fries until they are golden brown and crispy.
- Transfer the fries to a large platter or serving vessel and top with onions, banana peppers, green peppers, olives, and diced tomatoes. Sprinkle feta on top.
- To make the dip:
- Combine feta cheese, ricotta cheese, Italian dressing, garlic, and red pepper flakes in a bowl. Mix well and serve.
Notes
Chef Home Tip: Dice vegetables ahead of time to save on prep work and refrigerate for up to three days.
