You can skip the hassle of baking on hot summer days the next time you want that fresh-from-the-oven cookie taste when you whip up this Cookie Dough No Churn Ice Cream recipe full of sweet chocolate chips instead.
What is your favorite kind of cookie? My favorite is soft, homemade chocolate chip cookies fresh from the oven. That first bite can whisk me away with childhood memories. The summer months are here though, and I’m hesitant to use my oven too much. How can you keep your kitchen cool and still enjoy that wonderful chocolate chip cookie taste? I’ve created a simple Cookie Dough No Churn Ice Cream recipe for you! It’s chock full of mini chocolate chips and delicious cookie dough batter. It is quite simply the perfect summer dessert and I know you will love it.
We all know that raw batter calls to us like a sweet siren. I crave any dessert that has raw cookie dough in it. Did you know it’s crazy easy to make at home? I recently posted a recipe for safe raw cookie dough that you can use in ice cream, frosting, and more! Raw chocolate chip cookie dough is super easy to make and I bet you already have all the ingredients at home. All you need is flour, brown sugar, vanilla extract, heavy whipping cream, butter, and mini chocolate chips. This recipe makes about 12 balls; you will need six of them to make this ice cream batter. Please make sure that you heat your flour to 160ºF – this helps eliminate any health risk issue from eating raw dough.
*If you are pregnant or immune compromised, please seek the medical advice from your doctor before eating any raw foods.
Cookie Dough No Churn Ice Cream Recipe
After you make this delicious Cookie Dough No Churn Ice Cream, how do you store it? You have a couple of options and I bet you will have one already in your pantry. For this recipe, I used a ceramic bread pan and I think it’s been my favorite way to store ice cream. A bread pan holds all of this ice cream batter perfectly, fits into the freezer wonderfully, and you won’t suffer expansion issues. You can also use an 8″x8″ pan or one of those awesome plastic ice cream containers. Cover the pan tightly with plastic wrap or foil at freeze for at least eight hours before enjoying.
Ingredients
- 2 cups heavy whipping cream
- 1 14-ounce can sweetened condensed milk
- 1/2 tbsp vanilla extract
- 1/4 cup mini chocolate chips
- 6 cookie dough balls, chopped (please use a safe to eat dough recipe)
Instructions
- In a medium bowl, whip cream until soft peaks form. This is usually about 3-5 minutes depending upon the type and speed of your mixer.
- In a separate bowl, combine milk, vanilla, chocolate chips, and cookie dough pieces.
- Gently add your milk mixture into the cream, stir until just combined.
- Pour into a prepared bread pan or ice cream storage container. Cover tightly with plastic wrap or foil and freeze for at least 8 hours.
