This simple Blueberry Spinach Smoothie Bowl recipe is a beautiful breakfast packed with fiber and protein that looks almost too pretty to eat. Top with your favorite nuts and fruit for a nutritious meal on the go.
I really used to rush breakfast in an effort to just get going with my day. I didn’t enjoy the first meal of the day, and certainly didn’t put effort into preparing something nutritious. On the weekends, I would take the time to make more healthful meals, like protein-packed cottage cheese pancakes. Then I realized those “special” breakfasts, combined with more mindful eating, really improved my day.
This changed my whole outlook, so I started to make my daily breakfasts a little more special, and nutritious too. I found that taking the time to make myself a great breakfast, and really savor it, made each day better. I managed stress more effectively and was more productive, plus I didn’t have those crazy mid-morning munchies anymore!
Blueberry Spinach Smoothie Bowl Recipe
A smoothie bowl is deceptively simple and much of it can be prepared in advance. In the morning the prep work is minimal, leaving more time to slow down and savor a scrumptious breakfast before starting a busy day. Enjoying a beautiful Blueberry Spinach Smoothie Bowl always puts a smile on my face, which is usually difficult to do in those hours before the sun comes up.
Do you have a picky spouse or kids? Prepare the same smoothie base for everyone and let each family member choose their own toppings. Use what you have in the refrigerator and experiment with different combinations. For example, add flavored yogurt, sneak in more vegetables like carrots and pumpkin purée, or substitute coconut milk for almond milk. There is no right or wrong way to make a smoothie bowl. Is your smoothie too runny? Then add some more yogurt or frozen fruit. Is it too thick? Try adding a splash more almond milk.
To make preparation a breeze, freeze bags of smoothie mixes with things like chopped fruit and vegetables for each day of the week in advance. In the morning, just empty the contents with a splash of almond milk, a dollop of yogurt or peanut butter, or a scoop of protein powder into a blender and pulse until smooth. Store healthy topping options like unsweetened shredded coconut, unsalted nuts, granola, and chia seeds in mason jars for quick and easy access.
Try a smoothie bowl tomorrow morning and see how a pretty and healthful breakfast makes your day!
