I really used to rush breakfast in an effort to just get going with my day. I didn’t enjoy the first meal of the day, and certainly didn’t put effort into preparing something nutritious. On the weekends, I would take the time to make more healthful meals, like protein-packed cottage cheese pancakes. Then I realized those “special” breakfasts, combined with more mindful eating, really improved my day.

Prepare the same smoothie base for everyone and let each family member choose their own toppings. Use what you have in the refrigerator and experiment with different combinations. Blueberry Spinach Smoothie Bowl

Ingredients

  • 1 cup frozen blueberries
  • Handful of fresh spinach
  • 1/4 cup plain yogurt
  • 1 cup unsweetened almond milk
  • 2 tbsp unsweetened and unsalted peanut butter
  • 1 tbsp flax seed
  • 1 scoop whey protein powder
  • Assorted nuts and fresh fruit for toppings

Instructions

  1. Combine the frozen blueberries, yogurt, almond milk, peanut butter, and flax seed in a blender. Pulse until smooth.
  2. Pour into a bowl and place in the freezer for 10 minutes to set. This prevents toppings from sinking.
  3. Remove smoothie bowl from freezer, garnish as desired.
  4. Enjoy immediately.
