Spring is in the air so it’s time for fun foods with fresh flavors. This recipe for Rack of Lamb with Mint Pesto is perfect for any special occasion! Fancy enough for an Easter Brunch, yet surprisingly simple enough for a family-style meal when you’re entertaining friends. This dish may look and sound intimidating, but you can pick up all of the fresh supplies at your local Fresh Market, and have the entire meal on the table in less than two hours. Paired with roasted brussels sprouts, sweet potatoes, and asparagus, this is an impressive meal no one can resist!
Ingredients
- 1 French Cut Rack of Lamb
- 1/2 cup chopped mint
- 1/2 cup chopped kale
- 1/8 cup chopped basil
- 1/8 cup chopped rosemary
- 6 garlic cloves
- 3 garlic cloves, minced
- 1/8 cup rosemary, minced
- 1 cup olive oil for sauce + extra for lamb
- 1/4 cup Parmesan Cheese
- Salt and pepper, to taste
Instructions
- Score the fat on the French Cut Rack of Lamb. Combine 1/4 cup olive oil, minced garlic, minced rosemary, salt, and pepper. Rub all over lamb and let it sit for an hour.
- Preheat oven to 450ºF.
- Prepare the mint pesto. Add mint, kale, basil, rosemary, garlic cloves, and parmesan into a blender. Blend while gradually adding olive oil to create a paste. Set aside or refrigerate.
- Cook lamb for 10 minutes until a crust forms.
- Lower the temperature to 350ºF and cook the lamb for 15 more minutes to your desired temperature.
- Let it rest for 10-15 minutes before cutting.
- Serve with mint pesto and roasted veggies.
