Chicken Fajitas Made Easy!
No need to get any pots or pans on the stove. Instead, toss thinly-sliced onions and peppers with chicken strips and a medley of spices and make everything under the broiler. The broiler is going to be your new best friend if you’re into quick dinners. Thinly sliced chicken can cook under the broiler in as little as 20 minutes without any stirring or mixing required. The chicken will be perfectly cooked through and even lightly crisped up and browned on top.
Your busy weeknight dinner in just 30 minutes!
In this same amount of time the bell peppers and onions will also get a nice char from the broiler while still staying slightly crisp. That’s the secret to fajita style cooking – you want veggies that still have a bit of crunch to them. For a low carb, high protein meal, you can serve these sheet pan Mexican fajitas as is. If you’re looking for an even more authentic Mexican dinner experience, chop up some tomatoes, thinly slice avocados, and serve this sheet pan meal with tortillas.
Think self assembled tacos. Kids will love this, and trust me adults will too. I find these Mexican sheet pan fajitas perfect in a tortilla with avocado, tomato, a squeeze of lime juice, and some cilantro. For those not following a dairy free diet, a dollop of sour cream and some shredded cheese would also work.

Ingredients
- 1 lb chicken breasts, cut into thin strips
- 1 red bell pepper, cut into thin strips
- 1 yellow bell pepper, cut into thin strips
- 1 large white onion, halved and thinly sliced
- 1 tbsp cumin
- 1 tbsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp cayenne pepper
- Salt/pepper to taste
- 8 corn or flour tortillas
- 2 avocados, thinly sliced
- 2 tomatoes, chopped
- Lime, cut into quarters
- Handful cilantro, chopped
Instructions
- In a large bowl, combine all the ingredients, tossing everything so that it is evenly coated in the spices.
- Place ingredients in single layer on a large baking sheet and broil on high for 20-25 minutes, or until chicken is cooked through.
- Serve as is or wrapped up on a tortilla topped with tomatoes, avocados, cilantro, and a squeeze of lime juice.

Home Chef Tip: For easy prep, combine all the ingredients and spices together in a large bowl! No need to separate the chicken since everything will cook together anyway!
