Vegan Nachos call for the perfect tortilla chip!
For these street food nachos, you’ll want to grab a sturdy tortilla chip. I like using restaurant style triangles or rounded yellow corn chips. Just make sure your chips are large with plenty of crunch so they can handle all the toppings!
You can’t eat this quick appetizer without salsa!
If you like spicy foods, these vegan nachos are for you! And if spice isn’t your thing, don’t worry, we have an option for you, too! As for the salsa, I like to use a medium jarred salsa and add a squeeze of lime. For a less spicy option, you can use a green salsa verde. Here is our favorite homemade salsa if you feel up to the challenge. Whatever style you crave, it’ll be delicious on this pile of vegan nachos!

Ingredients
- 6 oz tortilla chips
- ½ cup black beans
- 2 tbsp diced red onion
- 1 orange bell pepper, diced
- 1 avocado, diced
- ⅓ cup medium salsa
- 1 jalapeño, seeded and sliced (optional)
- Handful fresh cilantro, chopped
Instructions
- Spread the tortilla chips on a large microwave-safe plate.
- Add the black beans, red onion, and bell pepper.
- Microwave on high for 1 minute.
- Carefully remove from microwave and add the avocado, salsa, jalapeño, and cilantro.
- Preheat the oven to 300ºF.
- Spread the tortilla chips on a large baking sheet.
- Add the black beans, red onion, and bell pepper.
- Bake for 7-8 minutes until warm, but not browned.
- Remove from the oven and let cool slightly.
- Carefully transfer to a large plate and add the avocado, salsa, jalapeño, and cilantro.
