Roasted Sweet Potato Salad with Lemon-Thyme Dressing
Sundays are for celebrating friends and family and there’s no better way to do that than with food! This Roasted Sweet Potato Salad with Lemon-Thyme Dressing is perfect for a Sunday brunch. It’s fancy enough to impress, but simple enough to put together so that you have more time to just enjoy your gathering.
Roasted sweet potatoes, cranberries, and almonds are topped with feta cheese, then drizzled with a delightful homemade lemon-thyme dressing for a seasonal taste explosion with every bite!
When I think of Sunday brunch with friends, I think of baked oatmeal, omelettes, bagels with pumpkin cream cheese, pancakes, and Roasted Sweet Potato Salad with Lemon-Thyme Dressing made fresh for brunch time!
Who doesn’t love brunch? Also, bonus points if you convince your guests to come in their pajamas. Award points for the absolute best pajamas, which are usually out in full force in the cold-weather months. Personally, I love my moose pajamas.
Ingredients
- 3 medium-sized sweet potatoes, scrubbed and cubed
- 1/4 cup dried cranberries
- 1/4 cup almonds (chopped or whole), roasted
- 2 tbsp oil
- 1/4 cup feta cheese
- Salt and freshly cracked black pepper to taste
- 1 tbsp fresh thyme
- 1 tbsp lemon juice
- 3 tbsp olive oil
- 1 tbsp honey
- Salt and freshly cracked black pepper to taste
Instructions
- Preheat oven to 400ºF.
- Grease a baking pan with oil and set aside.
- In a bowl, whisk together oil, salt, and freshly cracked black pepper.
- Toss the cubed sweet potatoes in the oil mixture to coat.
- Arrange on the prepped cookie sheet in a single layer.
- Bake for 18-20 minutes, tossing half way to turn, until the sweet potatoes soften and turn slightly brown.
- Let the sweet potatoes cool down and mix in the cranberries and almonds.
- Whisk all of the dressing ingredients together and drizzle over salad.
- Top with feta cheese and serve.
Notes
Home Chef Tip: For a dairy-free alternative, top with black beans instead of feta.
