This avocado salad recipe starts with fresh produce. We picked small, crunchy cucumbers and a tangy, red tomato to go with our ripe avocados. So good! You are going to get the bite of the cucumbers and the burst of tomato flavor blended with the rich avocados.

To bring out all of the fresh, healthy flavor of the vegetables, whisk together oil, vinegar, spices, and seasonings in a large bowl. (Get the complete ingredient list at the bottom of this post.) You can use olive oil or vegetable oil for this avocado salad.

We also used more flavor boosters in our dressing: just a touch of honey and a dab of mayonnaise. The honey offsets the acidity in the vinegar and helps the dressing cling to the vegetables. Just a little bit of mayo brings all of the ingredients together. No worries, you don’t need much in this healthy avocado salad.

To prepare the vegetables, chop the cucumbers, tomatoes, and avocados into similar bite-sized pieces. I like to partially peel my cucumber before chopping. Some people find the green cucumber peel bitter, but I like the taste and it gives more color to the salad. You can peel it all off if you prefer.

Pick smaller, firm cucumbers for this recipe. You don’t want the larger cucumbers with all of the seeds to water down the dressing. However, if all you have is large cucumbers, scrape out the seeds before chopping.

Cucumber Tomato Avocado Salad

Yield: About 6 cups

Cucumber Tomato Avocado Salad

Ingredients

  • 1/4 cup oil (vegetable or olive)
  • 1/4 cup white vinegar
  • 1/4 cup water
  • 2 tbsp honey
  • 1/2 tbsp mayonnaise
  • 1 heaping tsp dried Italian herb blend
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 2 cups chopped cucumber
  • 1 large red tomato, chopped
  • 2 avocados, chopped
  • 1/2 cup sliced red onion
  • 1/2 cup Feta cheese for serving, optional

Instructions

  1. In a large bowl, whisk together the first 10 ingredients until smooth. Set aside.
  2. Add the cucumber, tomato, avocado, and onion to the bowl. Toss everything together gently until all the vegetables are well coated.
  3. Cover and refrigerate until serving. Transfer to a serving dish and sprinkle feta cheese over the top if desired.
