This Breakfast Protein Bowl is loaded with hard boiled eggs, fresh avocado, and bright cilantro. There’s no need to skip breakfast, the most important meal of the day, anymore because this protein-packed breakfast is ready in no time!
It’s a new year, which means most of us are trying to be more active, make better lifestyle choices, and eat healthier. For me, there’s something motivating about a fresh year. It feels like a clean slate and gives me renewed excitement to tackle my goals. I’m a notorious breakfast-skipper, but I’ve resolved to eat breakfast every day this month in hopes it will help me to create a new habit. One of my current favorites is this Breakfast Protein Bowl, which is loaded with hard boiled eggs, fresh avocado, and bright cilantro.
Breakfast Protein Bowl Recipe
To make this morning dose of yum, I start by grabbing some hard boiled eggs out of the fridge (I boil a dozen or so at the beginning of each week so they’re already on hand) and I give them all a rough chop before adding them to a bowl.
Next, I take an avocado and cut it in half. I save one half and dice up the other and add it to my bowl.
Then I grab some cilantro and give it a rough chop before adding it to the bowl.
For some added flavor, I simply drizzle on a bit of olive oil, sea salt, and crack some pepper over the top.
This has quickly become one of my favorite breakfasts to whip up (especially when I boil the eggs ahead of time). It’s easy to pull together and tastes divine. It’s not so bad on the eyes either, if I do say so myself. All of that yellow and green color! As a reformed breakfast-skipper, this Breakfast Protein Bowl has been a lovely addition to my mornings.
Ingredients
- 2 hard boiled eggs, chopped
- half of one avocado, diced
- 1 tablespoon cilantro, finely diced
- olive oil (to taste)
- sea salt (to taste)
- pepper (to taste)
Instructions
- Combine all ingredients in a bowl and enjoy! That simple!
