With those two guardrails in mind, I whipped up a simple Meaty Breakfast Bowl recipe that will satisfy every member of your family (especially dad!).

This meaty breakfast bowl has room for customization and gives you the freedom to add in your own seasonal vegetables. Shop local and look for summer vegetables like zucchini, summer squash, and eggplant if desired. This recipe gives you the basic outline for your breakfast bowl, but feel free to add your favorite flavors to make it a unique family breakfast experience. Since my husband enjoys mushrooms and onions, I made sure to use them for his meaty breakfast bowl. I also went a little wild with cilantro because sometimes, you just can’t have enough!
To create the manliest breakfast bowl ever, you will need eggs and ground pork as the focus for this dish. If you want to use sausage links instead, you can. Have extra time? Grill your sausage! Otherwise, prepare your ingredients in a large skillet. This recipe can make enough to share, but only if Dad wants to! Encourage your children to help you in the kitchen. They can help prep vegetables by rinsing them clean or mixing everything together in a large bowl with a spoon.
- 6 large eggs
- 1 pound ground pork breakfast sausage
- 1 white onion
- 6-8 white mushrooms
- 1 clove garlic
- 1/4 cup milk
- 1/2 cup shredded cheddar
- 1 tbsp fresh cilantro
- 1 tbsp olive oil
- Salt and pepper
- In medium pan, brown sausage. Salt and pepper to taste. Drain excess grease.
- Dice onions, mushrooms, and garlic clove. Sauté in separate pan with olive oil.
- In large mixing bowl, crack eggs, and add milk, cilantro. Whisk until frothy.
- In large pan on medium heat, combine meat, vegetables, and eggs. Add salt and pepper to taste.
- Scramble until eggs are thoroughly cooked.
- Top with shredded cheese and serve.
